Do you have some chicken leftover from last night’s dinner?
Have any leftover Rotisserie chicken?

Well, before using it to make a boring chicken sandwich or soup,
use it to make one of the three dishes listed below.

a) Citrusy Caesar Salad!
In the words of popular T.V. chef, “let’s kick it up a notch” here’s a
recipe for kicked-up chicken salad.
To make:
Turn plain and boring chicken salad into something spectacular using
lemon juice.
To make:
In a bowl, whisk 1/2 cup of mayo, 2 Tbs. of lemon juice, 1 tsp. of Dijon
mustard and 1 clove of garlic, (minced). Toss with 4 cups of chopped
romaine, 2 cups of sliced cooked chicken, 2 hard-boiled eggs and 1/4
cup of cheese, (cheddar, Parmesan or Provolone) Grated.
Serves 4.

b) Smoked Bacon Club Sandwich!
Crisp bacon makes this club sandwich extra special.
To make:
Toast 3 slices of bread. Spread 2 Tbs. on 1 slice; layer with lettuce
leaf, 4 slices of cooked chicken, 2 slices of tomato and 1 slice of
red onion. Top with 1 slice of bread, 1 lettuce leaf, 2 slices
cucumber, 2 slices cooked bacon and remaining bread. Cut in half.
Serves 2.

c) Slow-Cooked Chicken Noodle Soup-
Break out the slow-cooker and let it cook your lunch time or
dinner- time soup.
To make:
Add 1/2 cup of chopped onion, 1/2 cup of chopped celery, 1/2 cup of
chopped carrots, 4 cups of chicken broth, 2 cups of cooked
chopped chicken, 1/2 tsp. of salt, 1/2 tsp. of turmeric and 1/4 tsp.
of black pepper to your slow-cooker (crock pot) turn it on high,
cook for 2 hours, add 1/2 box of cut up pasta, turn the slow-cooker
to low and cook for another 30 minutes. Serves 6. Serve with a
crusty bread or gluten-free crackers.
