If you plan on cooking out today or in the next few weeks, you’ll probably want
a tasty dish (or two) to accompany that burger, hot dog or steak.

And if your usual side dishes are baked beans, corn on the cob or a green salad,
here are 3 side dishes that you can make the day of or the day before.

The 3 Side Dishes:

* Broccoli-Bacon Almond Toss!
Crumpled bacon really makes this dish a winner.
To make:
In a bowl, mix 3/4 cup of mayonnaise, 2 Tbs. of cider vinegar, 1 Tbs. of Sugar
and 1/8 tsp. of salt; stir in 6 cups of broccoli florets, 1 cup of red grapes (halved),
1/2 cup of diced celery, 1/2 cup of chopped red onion, 3 slices of bacon,
(chopped)and 1/4 cup of slivered almonds. Cover; chill for 2 hours or overnight.
Serves 6.

*Sweet & Sour Cukes-
You eat cucumbers in a salad or eat a few slices with some dressing, but
add some honey and citrus and really impress your guests.
To make:
In a bowl, combine 3 Tbs. of lemon juice*, 2 Tbs. of honey, 1 Tbs. of fresh dill
and 1/4 tsp. of salt; stir in 3 large cucumbers (thinly sliced), 1/2 cup of diced red
onion and 1/4 cup of chopped parsley. Cover; chill for 1 to 2 hours. Serves 6
* You can use freshly squeezed orange juice or a combination of orange and
lemon juice.

* Creamy Potato Salad!
Yes, potato salad is a staple for a lot of people this time of year, but the
secret ingredient that’s added to this salad really gives it some “tang.”
To make:
In a big pot, boil enough potatoes (with the skins on) until
slightly tender. Put the potatoes to the side and let them cool down.
In a bowl, combine 3/4 cup of mayonnaise, 1/4 cup of sour cream,
1 Tbs. of DIjon mustard, 1/2 tsp. of garlic powder, 1/4 tsp. of salt
and 1/8 tsp. of smoked paprika; stir in the potatoes, 1 shallot (thinly
sliced)and 1/3 cup of sliced scallions. Cover; chill for 1 to 2 hours or
overnight. Enough for 6 servings.

That’s it, 3 different side dishes for a 4th of July celebration
or any type of celebration in the next weeks or months.
