It’s a few days away from Memorial day and if you plan on having London Broil,
make sure to do something extra special with the leftovers.

Here are 3 recipes that’ll turn that leftover London broil into a tasty and speedy
meal any day of the week.

Recipe No. 1-
Steak Sandwich Salad!
This is a different and unique take on the “Philly classic” aka Cheese steaks.
Ingredients:
4 slices of Prosciutto
6 cups of torn Romaine lettuce
1/2 small red onion
2 mini cucumbers, diced
1/2 cup of fresh corn or thawed, (drain it first)
1/2 cup of crumbled Gorgonzola cheese or Feta, 2 oz.
1/3 cup of sliced sun-dried tomatoes
2 cups of cooked London broil, 1/2″ wide strips
6 Tbs. of balsamic vinegar
1 package of frozen garlic bread (10oz.)
To make:
In a nonstick skillet, cook prosciutto over medium-high heat until crisp,
2 min.; break up. Arrange lettuce on a serving platter; top with cucumber,
onion, corn, cheese, tomatoes and beef; drizzle with dressing.
Cook bread according to package directions; cut into strips. Top salad
with crispy prosciutto and garlic bread.
Calories per serving- 580, Prot-32g. Carbs-40g.

Recipe No. 2-
Veggie Beef Stir-Fry
No need to buy beef stir-fry from a Chinese restaurant thanks to
this recipe.
Ingredients:
1 Tbs. of oil
6 oz. of broccolini, cut into 1 1/2″ pieces, about 3 cups
10 slices of red and yellow peppers, cut into thin strips
1 red jalapeno pepper, sliced
2 cups of bean sprouts
2 cups of regular or baby spinach
4 scallions, sliced
2 cups of cooked London broil, 1/2″-wide strips
1/3 cup of Teriyaki sauce
1 Tbs. of toasted sesame seeds
To make:
In a large nonstick skillet, heat oil over medium-high heat. Add broccolini
cook, stirring for 3 mins. Add mini peppers and jalapeno peppers;
cook, stirring until tender, for 3 mins. Add sprouts, spinach and 2 Tbs. of
scallions; cook until spinach is wilted, 1 min. Add beef and teriyaki
3 to 4 mins.
Sprinkle on the remaining scallions and sesame seeds.
Calories per serving-275, Prot-22g. Carbs-21g.

Recipe No. 3-
Steak Fajita Roll-Ups!
Use leftover London broil to make your own tasty Fajitas.
Ingredients:
1/3 cup of olive oil
3 Tbs.of lime juice
2 tsp. of grated lime zest
2 tsp. of green Tabasco sauce
1/2 tsp. of salt
6 cups of baby or regular spinach
1 red or yellow bell pepper, sliced
1 1/2 cups of red cherry or yellow grape tomatoes, halved
2 cups of London broil, 1/4″ -wide strips, cooked
1/2 cup of red kidney beans, rinsed and drained
4 flour tortillas, (7 1/2″) warmed
1 avocado, pitted, peeled and sliced
1/3 cup of fresh cilantro leaves,
Lime wedges, (optional)
To make:
In a large bowl, whisk together oil, lime juice, zest, Tabasco and salt.
Add spinach, beef, pepper slices, tomatoes and beans; toss until coated.
Divide beef mixture among tortillas. Top with avocado and cilantro.
If desired, serve with lime wedges.
Calories-505, Prot-24g, Carbs-37g.

And if you want to tenderize your London broil before cooking it on the
grill, you can slather it in plain yogurt (both sides) and let it sit for a few hours
or overnight in the fridge. Or sprinkle salt on it (both sides) and let it sit
for a few hours.
After an hour or more, just use a paper towel to wipe off the salt.
One last tip: Make sure to go back and reread our post on marinating
