If you plan on having roast beef this Valentine’s day and there’s some
leftovers, use it up and make something other than roast beef sandwiches,
and if you’re not sure how to use it , don’t worry, listed below,
are 3 recipes you can make for lunch or dinner.

Recipe No. 1-
Roast Beef, Mushroom and Vegetable Soup!
Mason Jar Soup!
To make:
In a Mason jar, layer 4 slices of roast beef, (chopped)
1/4 cup of shredded carrots, 2 slices scallions, 1/4 cup
of shiitake mushrooms, 1 Tbs. of soy sauce, 1 Tbs. of sesame oil
and 1/2 cup of dry rice noodles. Just before eating, pour in 2 cups of
boiling water; leave for a few mins. stir and pour into bowls.

Recipe No. 2-
Beef and Kale Salad with Blue Cheese Dressing!
A salad that’s not only healthy, but a little decadent as well.
To make:
In a bowl or plastic storage container, toss 2 cups of baby kale,
4 chopped slices of roast beef, 2 Tbs. of blue cheese, 2 Tbs. of toasted
walnuts, 2 Tbs. of dried cherries and 2 Tbs. balsamic vinaigrette. Chill
until ready to eat.

Recipe No. 3-
Roast Beef Wrap with Tangy Sauce!
Put away the sandwich and have a wrap instead.
To make:
In a small bowl, prepare the sauce. Mix 1 Tbs. of mayonnaise,
1 tsp. of Dijon mustard and 1/2 tsp. of horseradish. Season
with salt and pepper. Spread over a whole-wheat wrap, then layer
on romaine lettuce, 4 slices of roast beef, 2 slices of cheese,
(American or Provolone) and tomato slices. Roll up; cut in half.

That’s it- 3 recipes for that leftover roast beef.
