Three Leftover Turkey Recipes!
It’s that time of year again, Thanksgiving, and if you’re not sure what to do with
all of that leftover turkey, here are 3 suggestions.
1) Turkey Noodle Soup!
Chicken usually gets all of the attention when it comes to soup, but today,
it’s all about the turkey.
To make: In a medium pot, saute 1/4 cup each of chopped onion, celery
and carrots in a Tbs. of oil or use some of the stock (juice) from the turkey
for 5 mins. or until the veggies are softened. Stir in 2 cups of turkey broth
and 1 cup of shredded turkey and 1/8 tsp. of black or white pepper.
Bring to a boil. Add in the noodles (5 oz. ) of spaghetti, elbow or ziti.
Cook until the pasta is tender–about 7 to 8 mins.
Enough for 2 servings.
2) Waldorf Turkey Sub!
If you’re a regular at Subway, save some money and make this turkey
sub at home.
To make:
Mix 1/2 cup of diced turkey, 2 Tbs. of mayonnaise, 2 tsp. lemon juice,
1/4 cup of green or red grapes and 1 Tbs. of chopped walnuts;
spread onto the bottom of a sub roll. Add the roll top.
Enough for 1 serving.
You can make this at night, refrigerate it and eat it the next day.
Allow the mayo, nuts and lemon juice to mesh and it (the sandwich)
will taste better the next day.
3) Pepper Jack Turkey Quesadilla!
If you’re a fan of spice, then this Tex-Mex dish is perfect for you.
To make:
Mix 1 cup of shredded turkey, 1/4 cup of sauteed peppers and a pinch
of cayenne. Place 2 (8″) tortillas on a baking sheet; add 3 Tbs. of shredded
pepper Jack, Top with chicken mixture, 2 Tbs. of cheese and a tortilla. Bake
at 350*F for 12 mins.
Enough for 2 servings.
