Hold onto that Beef-Brisket!

For most, hot dogs, chicken and burgers will be served this upcoming 4th of July,
but for those who plan on brisket, what are you going to do with the leftovers?

Well, if it’s like Thanksgiving and you only plan on doing sandwiches or meat
and veggie stir-fries, please try something more daring and unique.

Daring and unique?
Yes, use that leftover beef brisket to make the following 3 dishes.

Dish No. 1-
Cheddar-Bacon Pizza!
While shopping this week, pick up pizza crust, white cheddar and Alfredo sauce.
To make:
Place a 12″ crust on a baking sheet on a baking sheet; top with 1 cup of Alfredo sauce.
Sprinkle on 2 cups of chopped brisket and white cheddar, 1/2 cup of each crumpled
bacon and sliced onions (red or yellow), 1/2 tsp. of smoked paprika and 1/2 tsp.
of salt. Bake at 350*F for 15 mins. Enough for 6 servings.

Leftover Dish No. 2-
Pasta alla Vodka!
If the usual tomato-based pasta sauce is getting old, add these two ingredients
and really amp up the sauce, creaminess and decadence.
To make:
Make the pasta beforehand. Cook enough for 6 servings or just use the whole
box.
You can use Pippette pasta, (from Barilla), or the pasta, you prefer.
In a skillet over medium, heat, cook 3 cups of sliced brisket, a can of crushed
tomatoes, (28 oz.), a 1/2 tsp. of garlic powder, 1/2 tsp. of salt. Stir in 1lb. of
cooked pasta, 1/4 cup of cream and 2 Tbs. of vodka.
Serves 6.

Leftover Dish No. 3-
Meaty Quesadillas!
If spicy quesadillas are your favorite guilty pleasure snacks,
then this is the dish for you.
To make:
Mix 1 cup of sauteed and 1/8 tsp. of cayenne pepper. Place 2 (8″) tortillas
on a baking sheet; sprinkle with 1/2 cup of each shredded brisket and
Monterey Jack cheese. Top with peppers and 2 more tortillas.
Bake at 350*F for 10 to 12 mins. Serves 4.
