Burgers have gotten a bad rap these past 4 decades, you know:
too fattening, not good for you, artery cloggers, cholesterol
raisers and on and on.

But wait, is it all burgers?
What about veggie burgers?
Well, if you still want the burger experience without eating animal
products, just make sure to avoid those “plant burgers” that
contain a ton of white breadcrumbs, MSG (monosodium glutamate),
soy sauce and lots of salt, or better yet, make your own.

Yes, making your own veggie burger lets you see exactly what is going in
it and with that said, here’s a simple recipe for a veggie burger that’s not
only easy to make, tastes great, and helps sharpen your memory.

That’s right, a burger that’ll improve your memory.
The Burger:
A Chickpea Quinoa Burger!
Ingredients:
1 can of chickpeas (15.5 oz. can)
1 cup of cooked quinoa (cook a few hours before
or the day before and refrigerate)
1/2 cup of grated carrots
1 egg*
1/4 cup of grated Parmesan or Romano cheese*
1/4 cup of plain breadcrumbs (gluten-free)
2 scallions
2 tsp. of curry powder
To make:
Drain chickpeas, reserving 1/3 cup of liquid.
Mash chickpeas with liquid. Stir in remaining ingredients;
shape into 4 patties. In a nonstick skillet; cook over medium heat,
flipping once, until heated through.Serve plain or place on
a whole grain bun along with some lettuce, tomatoes, pickles
and a Tbs. of plain Greek yogurt.
Calories per burger 200.
* If you’re a vegan and concerned about the egg and cheese, just
leave them out.
And lastly, this burger can help sharpen memory thanks to the quinoa.
It (quinoa) is a whole grain that slows the release of insulin, which
improves brain nerve function to cut memory lapse risk in half.
