The Vegan Stir-Fried Rx To Slow Down Aging!
It’s just not stars in Hollywood who are concerned about aging,
according to recent research, people in Kentucky, Kansas and
all over the U.S. are too.
And if this is a concern of yours and you’d like more dishes (recipes)
to help you combat it, here’s one.
This dish is made with tofu, and that’s important especially if you don’t
eat meat, fish or eggs, why, you ask?
Tofu is one of the top sources of omega-3 fatty acids and the more of
these acids you get into your system, the younger your cells will be.
Plus, omega-3’s help prevent damage to telomeres (the caps on the ends of
chromosomes that indicate how fast the body ages).
The longer your telomeres, the less likely you are to develop inflammation
and other wear and tear on your body cells that lead to disease and other
illnesses.
You can also get omega-3 fatty acids from tuna, salmon, walnuts and flaxseeds.
So, if you’re a fan of tofu but aren’t sure what to do with it, use it to make
this delicious stir-fried dish.
The Recipe:
Stir-Fried Tofu with Crispy Garlic Chili!
Ingredients:
1 block of tofu (14 to 16 oz.) drained and pressed
3 Tbs. of vegetable or avocado oil
12 ozs. of baby bella white button mushrooms, (stems trimmed)
3 celery stalks, thinly sliced on a diagonal
2-inch piece of ginger, thinly sliced
1 jalapeno chile, thinly sliced
2 green onions, sliced on the diagonal
1 Tbs. of soy sauce (regular or gluten-free)
1 Tbs. of crunchy garlic with chili oil, or more to taste
1 tsp. of toasted sesame oil
juice of 1 lime
3 Tbs. of chopped fresh cilantro
4 cups of brown or white rice, best if made the day before
To make:
Cut block of tofu into thirds crosswise, then cut each piece
crosswise again, and then into 1-2 inch pieces. Pat dry with
paper towels
Heat 2 Tbs. of oil in a large nonstick skillet over medium-high.
When oil is shimmering and easily slides across surface of pan,
carefully add tofu in a single layer and cook, undisturbed, until
golden brown underneath, about 4 to 5 mins. Flip each piece over
and continue to cook until browned on second side, another 4
mins. Transfer tofu to a plate, leaving oil in pan.
Pour remaining 1 Tbs. of oil into a skillet and heat over medium-high
until shimmering. Add mushrooms to pan and cook, undisturbed, until
crisp around the edges and browned underneath, about 5 mins.
Give mushrooms a toss and continue to cook, tossing often, until
browned and crispy in most spots, about 4 mins. longer.
Add fried tofu, celery, ginger. chile, green onion, soy sauce, crunchy
garlic and sesame oil to pan. Cook, tossing often, until celery is crisp-tender,
about 3 mins.
Remove from heat and add lime juice. Scatter cilantro over and toss once more.
Eat it as is or heat up some rice and serve this on top.
Any leftovers? Just heat up in a pan or cast iron skillet on top of the stove
or in the oven 350*F for ten minutes.
Another tip: you can also add any veggies you have on hand to increase
the nutrient count and really slow down the aging process.
