The Meatless Comfort Food Rx To Ease Indigestion and Reduce Bloating!
The number of people who suffer from indigestion and bloating is mind boggling
and if you’re one who suffers and uses over-the-counter meds or even doctor
prescribed meds to treat it with little success, then it might be time to try the
food Rx.
The food Rx?
Black beans.
We know what you’re probably thinking, beans to ease digestion and bloating?
Yes, and according to researchers black beans contain a specific type of fiber that
whisks toxins and chemicals out of your system, which help indigestion and
bloat decrease by a whopping 60%.
Plus, black beans help heal the digestive tract.
So, now that you’re aware of black beans and what they can do to help you get
relief, it’s time for a delicious recipe using the nutritious and price-friendly
legumes.
The recipe:
Stuffed Red Peppers with Black Beans!
Most people stuff their peppers with meat, (chicken, ground turkey or beef),
but this recipe swaps out the meat and uses beans as the protein.
Ingredients:
1/2 cup of rice (brown or white)
3 red peppers
4 oz. of pepper Jack cheese (or a cheese you prefer)
1 can of black beans, (rinsed and drained)
2/3 cup of prepared salsa
1/2 cup of chopped red onions
1/2 cup of chopped cilantro (fresh) plus a few whole leaves for
garnishment
1 cup of red cherry tomatoes- (halved)
To make:
Heat the oven to 350*F. In a pot combine rice* and 1 1/2 cups of water;
over medium-high heat, bring to a boil. Reduce heat to low; cover and cook
until water is absorbed, about 20 mins. Let stand 5 mins.; fluff with a fork.
Let the rice cool.
The next step:
Halve peppers lengthwise; remove and discard ribs and the
seeds. Shred cheese. In a medium bowl, combine beans, salsa, onion,
chopped cilantro, rice cheese and tomatoes.
The last step:
Divide mixture among pepper halves. Transfer to 13″ X 9″ baking dish.
Cover with foil; bake until peppers are tender, 20 to 25 mins. Transfer the
peppers to a platter; add the cilantro leaves for garnishment.
* Rice- You can save time by making the rice a day or two before.
