If you plan on making soups next week or next month, then you may want to try using
a special ingredient to make your soups lower calorie and creamier.

As the weather gets colder many of us spend our time indoors making soup,
and if you’re looking for lower calorie soup recipes for weight loss,
(your resolution for the new year), you’re in luck.

The following soup recipe comes from author, nutritionist and television
star: Joy Bauer.
The soup recipe is special because Ms. Bauer has used a trick many people
who go vegetarian or vegan use and the trick:
Find a suitable replacement for a fattening or unsuitable food and in this
case, Ms. Bauer has discovered Tofu.

Yes, that block of whiteness that doesn’t have any taste, can now be added
to certain dishes (like soup) to add creaminess to tomato soup.

Ms. Bauer is always looking for ways to lower the calorie count of many of
our favorite comfort foods and her tomato soup recipe uses tofu, instead of
heavy cream.

So, if you’re a fan of soup and want to start the new year off right, (health-wise)
copy the recipe listed below, head to the grocery store and pick up the items.

The recipe: Creamy Low-Cal Tomato Soup!
Before cooking the soup, you may want to wrap the tofu in a few paper towels
or a clean towel and set it on the counter for a few hours. Doing this removes
a lot of the excess water in the tofu.
To make: In a pot, heat 1 Tbs. of olive oil, 1 onion, (diced), 2 carrots (peeled and
chopped) and 2 cloves of minced garlic over medium heat; cook for 5 to 7 mins.
(making sure to not let the garlic and onions get too brown). Add 3Tbs. of tomato paste,
1 (28 oz.) can of diced tomatoes and 3 1/2 cups of water; bring to a boil. Cover, simmer
on low for 15 minutes. Stir in 8 oz. of silken tofu; cook uncovered for 15 mins. Let cool
and then puree in a blender until smooth.

You can also go to youtube and type different recipes for tofu in the search bar
and you’ll find that you can use tofu to make frosting, cheese, (feta and mozzarella),
milk, sweet and sour tofu, tofu curry, eggs, and non meat dishes.
