Ingredients:

1 tomato.diced

2 Tbs. of tomato paste
1 can of kidney beans, rinsed and drained
6 flour tortillas
A few sprigs of parsley and slices of thin onion (red or yellow)
To make:
Coat a large nonstick skillet with cooking spray; heat over medium-
high heat. Add ground beef; cook, stirring frequently and breaking up with
a spoon, until no longer pink, 7 to 8 mins.
Stir in seasoning, tomato paste and beans; simmer until thickened, 3 to 5 mins.
Remove from the heat. Dividing evenly, spoon meat mixture and
shredded cheese onto the centers of tortillas.
Top with parsley and sliced onions; roll to enclose.
Enough for 6 servings.
