You love to prepare a number of healthy dishes for your family, but there’s
one thing you hate about preparing healthy dishes: using a number of pots and pans.
If that’s the case. we have something that’ll limit the number of pans you
use, what is it?
One-Pan Dinners.
1 sheet pan
5 ingredients
10 min prep time
and hopefully. lots of satisfied family members.
And something even more special: The sheet pan dinners
are all gluten and dairy-free.

Sheet Pan Dinner No. 1-
Honey-Lime BBQ Chicken!
Ingredients:
1/2 cup of barbecued sauce
2 Tbs. of honey
3 medium limes, zested and juiced
1/4 cup of fresh cilantro
2 1/2 lbs. of chicken legs
To make:
Heat the oven to 425*F. In a large bowl, whisk the BBQ sauce, honey, 1/2 cup
of lime juice, the zest and cilantro. Add the chicken: toss well to coat. Arrange
the chicken in a single layer on a foil-lined sheet pan. Bake the chicken for
25 mins. or until cooked through, making sure to turn the chicken once.
This chicken goes well with salsa, lime wedges and tortilla chips.
Extra bonus: Here’s the recipe for guacamole that uses kale to help reduce the
calorie count. To make: In a large bowl, mash 3 avocados, 3 Tbs. of lime juice,
salt and pepper. Mix in some 1/2 cup of cut up kale, 1/4 cup of cilantro and
2 Tbs. of red onions, finely chopped.
Use this as a dip for the tortilla chips or serve it on top of the chicken legs.

Sheet Pan Dinner No. 2-
Spicy-Sirloin and Vegetables!
1/4 cup of extra-virgin olive oil
spices-
1 1/2 lbs. of sirloin steaks
6 medium parsnips, peeled and diced,
not a fan of parsnips? Use potatoes or sweet potatoes
2 Bell peppers, remove the tops and the seeds and cut into thin strips
As for the spices, you may want to go with an Indian flavor–combine 1 tsp. of
each-cumin, coriander, cumin, 1/4 tsp. of nutmeg,1/2 tsp. of ground cloves,
and 1/4 tsp. of salt and pepper.
To make:
Heat the oven to 425*F. In a bowl, mix 1 Tbs. of olive oil and the spices.
Mix well and rub over the steak. Place the steak on a greased pan. Toss the
parsnips (or sweet potatoes) and peppers with the oil and salt and pepper,
arrange around the edges of the sheet pan. If you prefer medium steak-
cook for 16 mins. or to desired doneness, turn the steak and veggies once.
After removing from the oven, let the pan sit for 5 mins. before serving.
Extra bonus:
If you feel this steak is a little plain and want something to go on top of it,
here’s a cucumber yogurt sauce.
To make: Using a cheese grater or vegetable peeler, grate or peel 1 cucumber,
squeeze out the extra liquid. In a bowl, stir together cucumber, 1 cup of plain
yogurt, 1/4 cup of fresh parsley, 2 Tbs. of lemon juice and a little salt and
pepper to taste.

Sheet Pan Dinner No. 4-
Steamed Cod with Vegetables!
Ingredients:
3 cups of cooked rice, Jasmine or white rice
3 cups of fresh spinach, cut into bite-sized pieces
2 red, or yellow bell peppers (remove the tops, the seeds and cut into thin strips)
6 medium co fillets, (about 1 1/2 pounds)
1/4 cup of extra virgin olive oil
To make:
Heat oven to 400*F. Place 6 sheets of parchment paper on a sheet pan.
Spoon 1/2 cup of rice onto each piece of the parchment. Divide spinach,
peppers and cod over rice.
Drizzle some oil over each serving of rice and fish. Sprinkle on a little salt
and pepper. Fold the parchment over and twist edges in to seal. Bake for 20
mins. Remove from the oven, let sit on top of the stove for a few mins.
before serving.
Extra bonus:
This cilantro-based sauce is great for those who hate plain fish.
To make: In a blender, add 1 cup of fresh cilantro, 1 clove of garlic,
1 jalapeno, (prefer it mild, remove the seeds)1 shallot, split in half,
2 Tbs. of red wine vinegar and 1/2 cup of olive oil. Blend until
smooth, add some salt and pepper and serve over the fish and veggies.

Sheet Pan Dinner No. 4-
Herbed Sausage and Peppers!
Ingredients:
1 1/2 lbs. of Italian sausage
1 lb. of mushrooms, white button or baby Bella
3 potatoes, peeled and cut into cubes
3 bell pepper, seeded and diced
1/2 cup of olive oil
1 Tbs. of fresh rosemary, minced
To make:
Preheat the oven to 400*F. Cut sausage into 1″ pieces and arrange
on a foil-lined sheet pan. Place the mushrooms, pepper and potatoes
on the sheet pan. Drizzle with olive oil, rosemary, salt and pepper. Toss
well to coat. Bake for 20 to 25 mins. or until sausage is cooked through.
Turn the vegetables over halfway through cooking.
Extra bonus: Sausage and vegetables may be enough of a meal for most
people, but if you or your guests want something to go on top of the
sausage and vegetables, here’s a honey and mustard dressing.
To make: In a bowl, mix 1/2 cup of Dijon mustard, 2 Tbs. of honey,
1/2 cup of mayonnaise, 1 tsp. of minced rosemary and 1 tsp. of minced thyme.
