The Mediterranean Diet Rxs For Appetizers!
If the new year 2022 is the year you vowed to get in shape and you’re doing the
Mediterranean diet, here are 3 appetizers that take about 10 minutes or less
and something even better- they’ll make you healthier and won’t pack on the pounds.
Appetizer No. 1-
Prosciutto and Melon-
Salty prosciutto and fresh melon get a touch of sweet tang from the balsamic vinegar.
To make: Cut into 6 (1″ wide) wedges from half of a seeded cantaloupe or honeydew;
cut off the rinds. Wrap each wedge with 1 slice of prosciutto. Place 2 cups of mixed
greens on platter; top with wedges. Drizzle with olive oil and white balsamic vinegar.
Enough for 6 servings.
Appetizer No. 2-
Tuscan White Bean Dip-
Pesto is the star in this bean dip and if you’re giving up or cutting down
on meat, beans are a suitable replacement.
To make: Puree a can of white beans (rinsed and drained) navy or cannellini,
in a blender, add 1/4 cup of pesto, 1/4 cup of plain yogurt, 1/2 tsp. of fresh
rosemary, 1/2 tsp. of lemon zest, 2 tsp. of lemon juice and 1 garlic clove,
blend until smooth. Serve with cut-up veggies or gluten-free bread or crackers.
Enough for 6 servings.
Appetizer No. 3-
Tomato-Basil Bruschetta-
The mix of garlicky bread and tomatoes is a match made in heaven.
To make: Rub 12 slices of toasted French bread with 1-2 cloves of garlic.
Mix 3 plum tomatoes (seeded and diced), 1/4 cup of chopped red onion,
2 Tbs. of chopped basil, 2 Tbs. of olive oil and 1 Tbs. of red wine vinegar.
Top toasts with tomato mixture.
Enough for four servings.
