If your Valentine’s day dinner should include a roasted chicken and
you have any leftovers, forget the chicken salad sandwiches
and have the following.

Recipe No. 1-
Creamy Quesadilla!
Buy some cheese and make a quesadilla with that leftover chicken.
To make:
In a bowl, mix 1/4 cup of shredded pepper Jack cheese, 1/2 cup of
shredded chicken, 1/4 cup of sliced red onions and the juice of 1 lime.
Sprinkle mixture over 1 whole-wheat tortilla. Fold in half, then microwave
for a minute.

Recipe No. 2-
Chicken and Quinoa Bowl!
After a few quesadilla lunches, it’s time to move on to a grain bowl,
a spicy grain bowl. This grain bowl is packed with energizing protein
and filling fiber, and a sprinkling of jalapenos which gives this gluten-
free dish extra heat and metabolism-boosting nutrients.
To make:
Scoop 1 cup of cooked quinoa into a bowl. Top with 1/2 cup of
drained and rinsed black beans, 1/2 cup of shredded chicken,
1 diced bell pepper and 1/2 minced jalapeno. Drizzle with 2 Tbs.
of olive oil and the juice of 1 lime.

Recipe No. 3-
Indian Chicken Curry!
After eating this dish, you may never go back to regular chicken salad
again. This dish is an Indian-inspired twist which contains a zesty
curry powder and yogurt sauce to wake up your taste buds.
To make:
In a bowl, mix 1/2 cup of diced chicken, 1/4 cup of Greek yogurt,
1 tsp. curry powder, 1 Tbs. of raisins, 1 Tbs. of sliced almonds and
1 Tbs. of sliced scallions. Serve on your favorite
bread or over greens.

That’s it, three recipes for that leftover chicken.
