If you’re a regular here, then you may have read a post or two about the Italians
and their diets.
One post was about the soup many people in some parts of Italy eat to boost
longevity,(the soup- Minestrone) and then there’s the post about the people
of Tuscany and the foods they eat to boost health and longevity.

And today’s post, comes to us from Sicily and the vegetable meal they use to
eliminate hunger and keep weight gain at bay. The meal is a salad and it
contains ingredients that can easily be found at any grocery store.

The recipe for Sicilian Salad!
Ingredients:
1 cup of cherry tomatoes, halved
1 small onion, finely chopped
2 cups of potatoes, boil, bake or microwave the potatoes until
slightly tender and then cut into 1″ cubes
2 Tbs. of green or black olives, pitted
1 Tbs. of Capers
2 tsps. of oregano
1/2 tsp. of salt
1/4 tsp. of black pepper
1/4 tsp. of turmeric
Fresh basil leaves- 1 cup.
Dressing, make your own with olive oil and red wine vinegar or buy
one already made
To make:
Place all of the ingredients (except the dressing) into a large bowl,
mix well, and add the dressing and mix again, or allow your guests or family
to add their own dressing.
That’s it, and if you want to tweak it, Americanize it or make it more
“protein-friendly” add some greens, (baby spinach, Romaine lettuce or
Swiss chard), sweet potatoes, beans (from a can, rinsed and drained),
boiled eggs and cheese, (feta or hard cheddar).
