This vegetable may get a bad rap as a food that isn’t good for you, but surprisingly
It does have some benefits.
The vegetable: Corn on the Cob.

Often called too starchy and not so good for you, corn is “gluten-free,”
packed with insoluble fiber, which aids in digestion and gut health
and prevents constipation.

So, if you’ve been avoiding corn for the reasons mentioned above,
it’s time to put it back on the menu. Boil it, eat it raw, cut the kernels
off the cob and saute or place it on a grill, it’s your call as to how
you’ll cook and eat it.

More tips:
Buying corn on the cob…
Husks should hug the ears, be dark green in color and feel moist.
Silks should be tan or golden. No dry or dark brown silk.
Important tip: Go to YouTube and learn how to make a healthy
tea using corn silk. Type corn silk tea in the subject line.

Storing corn on the cob…
Keep unhusked ears in a single layer in the refrigerator; chill husked
corn in plastic bags for up to 3 days.

And lastly- some ideas on how to prepare this gluten-free veggie.
* Bake it-
Want a savory corn dish?
Coat a 2 qt. baking dish with 1/4 cup of melted butter.
Whisk in 2 eggs, 3 cups of corn kernels, 2 cups of milk,
(regular or almond) 3/4 cup of flour, 2 Tbs. of sugar and 1 tsp.
of salt. Bake at 350*F for 50 to 60 mins. or until the top
is golden brown.

* Spicy Saute-
In a skillet, heat 4 Tbs. of butter over medium-heat.
Add 4 cups of corn kernels, 3 sliced scallions, 1 diced jalapeno,
2 cloves minced garlic and 1/4 tsp. of salt; cook, stirring for 4 to 5 mins.
To make it healthier- add some spices and herbs, parsley, thyme,
basil and ground ginger.

* Go Mexican-
A very popular corn dish in Mexico is called Elote and it’s grilled.
To make: Remove the husks from 4, 6 or 8 ears of corn.
Grill over medium-high heat, turning after 5 mins. Spread each
ear of corn with mayo; and then sprinkle on cotija (or Parmesan)
cheese, chili powder, chopped cilantro and lime juice.
