If you’re still on your New Year’s diet hoping to lose weight for the upcoming
holidays-Memorial day and The Fourth of July, and you still want to indulge
in your favorite dish like meatloaf, you’re in luck.

In Luck?
Yes, you can have Mom’s meatloaf and still lose weight.
How so, you ask?
By adding mushrooms.

That’s right, mushrooms, ( white button) to be exact, could melt seven
pounds of fat, plus shrink your waistline three inches. Compounds in white
buttons called polysaccharides steady blood sugar, keeping cravings at
bay.

So, if that second serving of meatloaf is calling you, go ahead and eat it,
just remember to add some mushrooms.
And if you get tired of white button mushrooms, try the brown button
varieties: Portobello and Cremini. These two mushrooms also
offer the same weight loss benefits. And something even better:
Grill up portobellos this Summer and use them as an ingredient
in your burger and as a bun. (Ditch the white bread).

And lastly, to help you in your quest to lose that winter weight, here’s
a simple recipe for meatloaf using mushrooms.
Mom’s Meatloaf Recipe:
Ingredients:
1 1/2 to 2 pounds of ground beef
1 cup of breadcrumbs (dried)
2 eggs
1/2 onion (chopped)
1 cup of milk
salt and pepper to taste
1 cup of white button mushrooms (finely chopped)
Optional ingredients:
The Glaze:
2 Tbs. of mustard
1/3 cup of ketchup
2 Tbs. of brown sugar
To make:
Turn the oven to 375*F.
Mix the first 7 ingredients together in a large bowl.
Shape it and place it into a well greased loaf pan (use non-stick cooking
spray, Pam)
And if you want a glaze on top, then mix the brown sugar, mustard and
ketchup together and pour over the meatloaf, but if you want to reduce
the calorie count, don’t add the glaze.
Bake for an hour, just stick a knife into the center to check and see
if it’s done, remove from the oven, set it on the stove for a 15 to 20
minutes and serve.
Calories per 2 slices: 370.
