If you use extra cups of coffee or candy bars to boost your energy levels, you may want to
toss them and try the beef alternative.

The beef alternative?
Yes, roast beef, filet mignon or a big steak will supply you with the energy you
need to get through holiday shopping, cooking and entertaining family and friends.

That’s right, beef, usually given a bad rap as a food that’s fatty, artery clogging
and just not good for you, but that’s not true and today, football great Tom Brady
said he’s 80% vegan and a 20% meat eater.

And here’s more helpful info:
Beef is packed with vitamin B-12 and a natural fatty acid (vaccenic acid)
that work together to energize brain neurons, increasing their production
of the fatigue-fighting hormone dopamine.
Eat 3 servings of good beef each week and you’ll boost energy levels by
40%, plus cut your risk of blue moods (aka SAD) and brain fog in half.

So, if you’re still enjoying a good steak or grass-fed burgers, continue to
indulge and for those who plan on serving roast beef this Christmas or
New Year’s day, here’s a recipe.

The recipe:
Roast Beef with Mushrooms and Tomatoes!

2 Tbs. of olive oil
1 Tbs. of Worcestershire sauce
2 cloves of garlic (minced)
8 oz. of white button or cremini mushrooms, halved
1 cup of cherry tomatoes, halved
Lemon slices, (optional)
Sprigs of rosemary and thyme

To make:
Heat oven to 400*F. Coat roasting pan with cooking spray.
Combine 1 Tbs. of olive oil, worcestershire sauce, half of garlic,
1/2 tsp. of salt and 1/2 tsp. of pepper; brush over the beef.
Roast the meat until thermometer inserted in thickest part of
reads 125*F. For medium rare, 40 to 50 mins. or to desired
doneness. Let the roast sit on top of stove before carving.
Part 2-
Take out the nonstick skillet; pour in 1 tsp. of oil and turn the
heat to medium-high. Add the mushrooms, 1/4 tsp. of salt and
1/4 tsp. of pepper; cook and stir until mushrooms are browned.
Reduce the heat to medium-low and stir in remaining garlic
and tomatoes, Cook about a minute. Transfer beef to serving
platter. Serve beef with mushrooms and tomatoes.
To make the roast look more elegant, add some lemon slices
and sprigs of thyme or rosemary.

Important tip:
Eating more beef will not work if you surround it (the beef)
with foods like mashed potatoes, Mac & Cheese, deep fried French
fries, white rice, corn, stuffing, biscuits, and rolls, in other foods, white and
highly processed foods. Surround your beef with a baked potato,
brown rice, green veggies and salad.

Important buying tip:
Roast beef like most other meats have gone up in price,
and if this is the case at your local supermarket, look
for deals at stores like Aldi, Costco, B.J.’s Publix
or Kroger’s. Also look for reduced prices on beef on Wednesday
or Friday at your favorite store.
