Tex-Mex Meal No. 1-
An unusual style of pizza and if you make it any other time of the year,
use regular pizza toppings.
Taco Meatloaf Pizza!
Ingredients:
2 eggs
1/3 cup + 1/4 cup of taco sauce
2/3 cup of plain dry breadcrumbs
1 lb. of hamburger
2 tsp. of chili powder
1/4 tsp. of salt
1/4 tsp. of pepper
3/4 cup of shredded Monterey Jack cheese-3 oz.
1/3 cup of sliced red and/or green pepper
1/4 cup of sliced red onion
1/4 cup of canned kidney beans, drained and rinsed
1/4 cup of corn
2 Tbs. of drained pickled jalapenos
To make:
Heat oven to 350*F. Line 9″ square baking pan with enough
foil for 2″ overhang; coat with cooking spray. In a bowl, whisk together
eggs and 1/3 cup of taco sauce; stir in breadcrumbs. Add beef, chili
powder, salt and pepper; using fingers, gently mix until just combined.
Press into pan. Bake until meat thermometer inserted in center registers
165*F, 15 to 20 mins. Spread top with remaining 1/4 cup of taco sauce.
Add 1/2 cup of cheese, peppers, onion, beans, corn and jalapenos, then
remaining 1/4 cup of cheese. Bake until cheese is melted, about 5 mins.
If desired, cut into squares before serving.

Tex-Mex Meal No. 2-
Vegetarian Nachos Casserole!
Need a vegetarian based Nacho dish? Well, this is it.
Ingredients:
1 avocado
12 cups of yellow corn tortilla chips, look for 13 oz. bag
8 oz. of white cheddar cheese, shredded
1 cup of dark red kidney beans, rinsed and drained (from the can)
2 plum tomatoes, cut into 3/4″ pieces
1/2 cup of (3/4″ pieces) yellow pepper
1 (2.25 oz.) can of sliced black olives, drained
1/2 cup of sliced red onion
Cilantro and lime wedges, (optional)
To make:
Heat oven to 350*F. Pit, peel and cut avocado into 3/4″ pieces;
reserve. In 10 cup baking dish, layer tortilla chips, cheddar cheese,
beans, tomatoes, yellow pepper, olives and red onion.
Bake until cheese is melted and tips of tortilla chips are lightly
roasted, about 10 mins. Top with reserved avocado. If desired,
dress up the plate with cilantro leaves and lime wedges.

Tex-Mex Meal No. 3-
BBQ Pork Tortilla Cups!
Use leftover pulled pork to make these tasty Cinco de Mayo treats.
Ingredients:
6 (7-8″) flour tortillas
1 ear of corn, husk removed (no fresh corn-use canned corn)
1 medium tomato, diced
2 Tbs. of chopped cilantro and 1/4 cup of cilantro leaves
1/8 tsp. of salt
1 lb. of pork tenderloin, cut into 3/4″ chunks
1 Tbs. of dry Southwestern seasoning
1 Tbs. of olive oil
3/4 cup of small white beans, drained and rinsed, from a can
1/2 cup of barbecue sauce
Guacamole and lime wedges (for garnish) optional
To make:
Heat oven to 350*F. Coat 6 jumbo muffin tin cups with cooking spray;
line with tortillas, folding as needed to fit. Bake until lightly browned
and crisp, 10 to 12 mins. Let cool. Meanwhile, in a pot of salted boiling water,
cook the corn until for 5 mins. Drain and let cool.
Cut kernels from the cob into the bowl; stir in tomato, chopped
cilantro and salt; reserve. In a separate bowl, toss pork with seasoning.
In large nonstick skillet, heat oil over medium-high heat. Add pork;
cook, turning, until browned and cooked through 5 mins. Add the
beans and sauce; cook for a min. or two.
Evenly divide pork mixture among tortilla cups; top with reserved
corn mixture and cilantro leaves. If you want, serve these cups with
guacamole and lime wedges.
