Recipe No. 1-
Banana Bread-
Have a few overripe bananas you don’t want to throw out?
Use them to make this bread recipe.
Ingredients:
1 3/4 cups of all-purpose flour
1 tsp. of baking powder
1/4 tsp. of baking soda
1/2 cup of butter, leave out to soften
3/4 cup of sugar
2 eggs
2 ripe bananas
1/3 cup of buttermilk
To make:
Heat 7-qt. air-fryer for baking at 300*F. Grease 8″ X 3 3/4″ foil
loaf pan. Mix the first 3 ingredients and 1/4 tsp. of salt. On medium,
beat butter and sugar. Beat in the last ingredients, then flour mixture.
Transfer to pan. Bake for 50 mins.; let cool before slicing.
Calories per 2 slices-340, Prot-5g. Carb-47

Recipe No. 2-
Nutty Cranberry Granola-
If you buy the unhealthy granola bars for your kids, you may want to leave
those bars on the shelves and make this healthier version from now on.
Ingredients:
1 cup of old-fashioned rolled oats
1/3 cup of salted cashews, chopped
2 Tbs. of shelled sunflower seeds
1/2 tsp. of ground cinnamon
2 Tbs. of maple syrup
1 Tbs. of oil
1/3 of dried cranberries
Plain yogurt and mixed berries, (optional)
To make:
Heat the 7 qt. air-fryer for baking at 300*F. Coat 8″ round cake pan with
cooking spray. In a bowl, combine oats, cashews, sunflower seeds, cinnamon,
syrup and oil. Spread in a pan. Bake, stirring halfway through cooking time,
until lightly browned, 15 to 18 mins. Stir in cranberries; let cool. If desired, serve
with yogurt and berries.
Calories per serving- 135, Prot-3g. Carbs-18g.
Important tip: Now is the time when fresh cranberries are on sale,
so stock up and make some on the stove top and use instead of the dried
cranberries. Or go online to youtube.com and type how to dry cranberries
in the search bar and use them in this granola recipe.

Recipe No. 3-
Mini Frittata Muffins-
Tired of the same old scrambled eggs? Try this lower calorie version
of an egg and muffin combo.
Ingredients:
8 eggs
2/3 cup of half and half
2/3 cup of shredded sharp cheddar cheese
2 scallions, chopped
1/4 cup of drained diced roasted red peppers
1 Tbs. of chopped fresh parsley
To make:
Heat 7-qt. air-fryer for baking at 300*F. Coat an 8 (1/2 cup capacity)
ramekins or ovenproof custard cups with cooking spray,
(or a regular muffin tin, sprayed with Pam). In a bowl, whisk together eggs,
half-and-half, cheese, scallions, peppers, parsley, 1/4 tsp. of salt and 1/4 tsp.
of pepper. Divide mixture among cups. In 2 batches, air-fry bake until no longer
wet in centers, for 15 to 20 mins.
Calories per serving-140, Prot-9g. Carb-3g.

Recipe No. 4-
French Toast Sticks-
For those who don’t want 1 or 2 slices of bread so early in the morning,
have quarter slices.
Ingredients:
1/2 of (12 oz.) pkg. of frozen unsweetened raspberries, (thawed juices reserved)
1/4 cup + 1 Tbs of sugar
2 eggs
1/3 cup of milk
1/2 tsp. of vanilla milk
4 slices of brioche bread, cut into 4 pieces each
To make:
In a blender, puree raspberries and juices with 1/4 cup of sugar; reserve.
Heat the air-fryer for baking at 350*F. In a shallow bowl, whisk together
the eggs, milk and vanilla. In batches, dip bread in egg mixture. Sprinkle
with remaining sugar. Coat air-fryer basket with cooking spray. In 2 batches,
bake bread pieces until browned and crisp, 6 to 7 mins. Serve with raspberry sauce.
Calories for 5 calorie sticks-250, Prot-6g. Carbs-45g.
