Are you trying to get your kids, spouse, parents or others close to you to eat
more produce?
Well, you may want to use a tip from a beloved T.V. chef and author that’ll
have vegetable haters loving all types of produce.

The T.V. chef and author: Paula Deen.
Ms. Deen says presenting vegetables in a visually stunning way can
get even the pickiest eaters to down more vegetables and her secret
for vegetable (salad) haters: A big bowl.

Yes, use a large bowl or trifle bowl and then just start layering the produce.
In fact, Ms. Deen calls the salad a 7-Layer Salad!

Ingredients:
6 cups of Romaine lettuce (Chopped)
4 cups of seeded tomatoes, (chopped)
4 cups of cucumbers, (chopped)
1 package of frozen peas, (16 oz. bag)
1/2 cup of sliced scallions
2 cups of sliced radishes
2 cups of light sour cream
1 cup of light mayonnaise
1/4 cup of lemon juice
2 tsp. of salt
1 1/2 cups of shredded reduced-fat cheddar cheese
6 slices of cooked crisp, crumbled bacon
In a large bowl, (trifle bowl) layer lettuce, tomatoes and cucumbers.
Combine peas and scallions; layer over cucumbers. Layer radishes over pea
mixture. In a separate bowl, combine sour cream, mayo, lemon juice and salt;
stir until smooth. Spread over radish layer, sealing the edges. Top with cheese and
bacon. Cover tightly with plastic wrap; chill at least 8 hours or overnight.
Bring out the next day and let stand on the kitchen counter for 15 mins. before
serving.
Enough for 10 servings. Calories per serving-290, Prot-12g. Carbs-19g.

There you have it, a visually stunning salad for any day of the week or serve it
on the fourth of July.
Important tip: Just make sure to let guests look at and marvel at the layers and
vibrant colors before serving it to them.

Here’s something from Ms. Deen to help wash down all of that produce:
The liquid treat: “Paula’s Lemonade.”
To make: In a gallon pitcher, stir together 2 cups of sugar and 1 cup of hot
water until sugar dissolves. Stir in 2 cups of fresh lemon juice and enough
cold water to fill the pitcher.
Cover and chill until ready to serve. Fill tall glasses with Ice cubes; add lemon
slices. Divide lemonade among glasses. If desired, make the glasses more festive
looking by placing a sprig of mint in each glass. Enough for 10 servings.
