It’s no secret Americans love their comfort foods. For some, it may be meatloaf,
or pizza, and for others it’s Macaroni and cheese.

And if this is your favorite comfort food but you’ve given it up or eat it
only on special occasions (due to the calories), there’s some good news
for you.
The good news:
You can still enjoy it, but you’ll have to use a healthy vegetable in the
recipe to lower the calorie count.
The healthy vegetable:
Cauliflower.

That’s right, the vegetable that’s used for everything to low-cal and low
carb rice and pizza, is now being used to replace some of the cheese in
one of America’s favorite comfort foods and thanks to a recipe from a
popular T.V. chef you can now indulge once a week or a few times a week.

The chef: Siri Daly, wife of popular T.V. host- Carson Daly, has taken
a favorite American comfort food cut the calories, fat grams and
cholesterol just by using cauliflower.

The recipe for Siri’s Mac & Cheese!
Puree 12 oz. of steamed cauliflower, 1 1/2 cups of milk and 1/2 tsp. of salt.
In a skillet, melt 3 Tbs. of butter (or Ghee) over medium heat. Whisk in 3 Tbs.
of flour and 1 cup of milk until thick. Fold in 8 cups of cooked pasta (elbow
or ziti), the cauliflower mix and 2 cups of shredded cheddar (or a mixture
of cheddar and mozzarella); transfer to a baking dish and bake at 350* F
until bubbly, about 35 to 45 minutes. Keep an eye on the dish to make sure
it doesn’t get too brown.
Fat grams cut: 26
Calories cut: 360
Cholesterol mg. cut: 82
