The summer months are a great time to lighten up the calories and take advantage
of the plethora of fruits and vegetables, but sometimes a craving for something
more substantial strikes.

Yes, an ice cream cone or a bowl of delicious mixed fruit may quell that craving,
but you may want something with a crust or dough and for you there’s a cake.

A cake?
Yes indeed, but not just any cake, this cake is loaded with fruit and is less than 200
calories per slice, and something even better- now that it’s summer, you get to
decide which fruits, so look below for the recipe and satisfy that craving for
cake.

The Cake:
Fruity Melba Angel Food Cake with a Whipped Cream Topping.
Low-calorie angel food cakes transform into a masterpiece with loads of fruit
and whipped cream.
Ingredients:
1 package of angel food cake mix or (buy one already made)
1 cup of heavy cream
2 Tbs. granulated sugar
1/4 tsp. of almond extract
Choose fruit you prefer, (ripe peaches, apricots or plums, pitted and thinly sliced
More fruit- fresh raspberries, strawberries or blueberries
Sprigs of mint- Optional
To make:
Position the oven rack to the lowest part of the oven
Turn on the oven to 350*F. Mix up the cake mix according to directions
on the box. Using a already-made angel food cake? Slice it half.
If using boxed mix, bake for 20 to 25 mins. or until golden brown.
Remove from the oven and let cool.
Get out your hand mixer and on medium-high speed, beat the heavy cream,
sugar and almond extract until stiff peaks form. Horizontally cut cake in half.
Place bottom half of the cake on a serving plate.
Spread with half of the whipped cream and top with slices of peaches, (or plums
or apricots or mangoes). Then add some berries. Top with the remaining cake layer,
cream and the rest of the fruit. Garnish with sprigs of mint for a more decorative look.
