Sunday Morning Pancakes With Spiced Compote!
Recipe for Lower Calorie Pancakes!
Are you a fan of Saturday or Sunday pancake breakfasts?
Well, if you ditched the ritual of pancakes for something with less calories,
it’s time to put them (pancakes) back on the menu.
(Or serve them for Sunday Brunch)
Popular T.V. chef Jamie Oliver has come up with a recipe that slashes about 130
calories from each serving of 3 medium-sized pancakes. His calorie-slashing
secret: Use oats and cottage cheese instead of white flour.
And if you’re a fan of syrup, you’ll also learn a recipe for a spiced apple and walnut
compote to go over those pancakes.
Oliver’s Lean and Mean Protein Pancakes
To make:
Heat up a frying pan or skillet, to medium-low heat.
In a blender, combine 1 cup of oats, 1/2 cup of cottage cheese, 2 eggs, 1 banana
a 1/4 tsp. of baking powder and almond milk. Stir well and pour 1/4 cupful
onto a lightly greased skillet or frying pan. Cook on medium-heat until brown and
turn over and cook another 2 or 3 mins.
And now onto the syrup.
Or compote, which is fruit cooked in syrup.
The following recipe uses Granny Smith apples, walnuts and brown sugar.
Recipe for Spiced Apple and Walnut Compote!
Ingredients:
1/4 cup of butter (Kerrygold or the brand you prefer)
1/2 cup of packed light brown sugar
1 tsp. of pumpkin pie spice
2 Granny Smith apples, peeled, cored and cut into 3/4″ wide wedges
1 cup of walnuts (chopped)
To make:
In a large non-stick skillet, melt butter over medium heat; stir in sugar and
spice. Cook stirring until sugar is dissolved. Add apples; cover. Reduce heat
to medium low and cook for 5 to 6 mins. Add the walnuts, turn the heat back
up and cook for another minute or two, and allow the compote to thicken.
Remove from the heat and pour over pancakes.
You can also use this special sauce on a bowl of oatmeal, millet, or gluten-free
desserts (muffins or brownies).
