Salad for lunch or dinner.

Are you less energetic now that you’re in your 30’s, 40’s or even 60’s?
Well, believe it or not there’s a food out there that can help boost energy levels
better than say-an energy drink, a sweet treat, (candy bar) or cups of coffee
with loads of sugar and that food is an Artichoke.

That’s right- artichokes contain silymarin, a compound that helps muscles
burn food for energy, cutting your risk of fatigue in half.
And something even better, in some cultures men eat a few artichokes each
day to boost sexual performance, they call it the “veggie Viagra.”

So, if your energy levels aren’t what they used to be and you want something
natural and healthy, make the following salad a few times a week.

The Energy Boosting Salad: Layered Tuna & Artichoke Salad!
Ingredients:
1/2 cup of olive oil and vinegar salad dressing
3 cooked potatoes, peeled and sliced
1 red bell pepper, quartered and sliced
3/4 cup of thinly sliced red onion
1 can (or jar) of quartered artichoke hearts, drained
3 cans of solid white tuna in water, drained
1 cup of cherry tomatoes, quartered
6 hard boiled eggs, sliced
1/3 cup of drained pitted sliced Kalamata olives
To make:
Spoon dressing into separate 6 oz. cups or Mason jars.
Start building your salads, lay down some potatoes, red peppers,
red onions, artichokes, tuna, cherry tomatoes, eggs and then the olives.
Garnish the top with lettuce or basil. Allow to sit and let the salad dressing
coat all of the layers and then enjoy.
Calories per jar-380, Carbs-24g, Fiber 2g.

And one more tip:
If you should locate fresh artichokes on sale at your grocery store,
stock up and when you do cook them, use this tip to ensure that the
centers are cooked through.
The tip:
After 20 mins. of boiling, pull on the top of an interior leaf.
If you can remove it with ease, the artichoke is tender. But if you need
to tug a bit before it pulls away, you should cook it a little longer.
