There’s nothing better on a cold day than a bowl of hot soup, but not all soups
are created equal.
Simply put, the creamier the soup, the higher the calorie count and if you enjoy
creamy soups, but not all of the calories, you’re in luck.
Thanks to T.V. nutritionist and chef Joy Bauer, you can have your creamy soup
without all of the calories.

Her spin on a creamy broccoli soup swaps out the heavy cream and uses
yogurt instead.

The recipe for Joy’s Creamy Broccoli Soup!
To make:
In a pot, heat 1 Tbs. of olive oil, 1 onion (diced) and 1/2 cup of diced celery
over medium-heat; cook for 6 to 7 mins. Add 1 clove of minced garlic and
1/4 tsp. of black pepper; cook for 5 mins. Add vegetable broth (4 cups) and
2 cups of broccoli (cut into bite-sized pieces); bring to a boil. Cook for 5 mins.
Add 1 can of rinsed and drained white beans (cannellini or navy), and cook
on low for a few mins. more. And to finish up- add 1/2 cup of non-fat Greek
yogurt (plain) and 1/4 tsp. of nutmeg.
Transfer to a blender, puree and spoon into bowls.
Fat grams cut: 30
Calories cut: 130
Protein grams added: 8
And lastly,
If there’s any soup leftover, pour into a glass or plastic container and
reheat at a later time.
