Want to end Valentine’s day on a high note?

Dessert No. 1-
Light & Luscious Chocolate Muffins!
Ingredients:
1 1/2 cups of semisweet chocolate chips, divided
3 free range eggs
1 cup of nonfat plain Greek yogurt
1 tsp. of vanilla extract
1/4 cup of agave nectar
1 cup of flour
1 Tbs. of baking powder
1/4 cup of unsweetened cocoa powder
To make:
Heat oven to 350*F. Line 12 muffin cups. In microwave-safe bowl,
microwave 1 cup of chocolate chips for a minute or until melted;
whisk in remaining ingredients. Divide among muffin cups. Bake
20 or more mins. or insert a knife in the center and if it comes out
clean, remove the muffins from the oven. Let cool and decorate
any way you like.
Calories 235 per muffin
Health benefit of dark chocolate and cocoa. Both are great for protecting
the heart. Chocolate contains polyphenols, which neutralize the inflammatory
compound C-reactive protein, slashing heart disease by 45%.

Dessert No. 2-
Devil’s Food Whoopie Pies!
If you’re a fan of devil dogs and whoopie pies, you’re in luck, this
dessert is a combination of both.
Ingredients:
1 package of dark chocolate cake mix or devil’s food cake mix
3 egg whites
1/2 package of spinach (cleaned and finely chopped)
1 cup of Marshmallow fluff
4 oz. of 1/2 less-fat cream cheese, (leave on the counter
for a few hours to soften).
5 tsp. of low-sugar strawberry jam
To make:
Heat oven to 350*F. Line 2 baking sheets with Parchment paper.
With a mixer, beat the first 3 ingredients until smooth. Spoon
3 Tbs. mounds onto sheets. Bake 10 min. With a mixer, beat
Fluff and cheese. Dot flat side of 12 cookies with 1/2 tps.
of jam; spread with frosting. Top with remaining cookies.
Calories- 260 per whoopie pie

Dessert No.3-
Glazed Mocha Chocolate Bundt Cake!
Ingredients:
1 box of chocolate cake mix (or devil’s food cake mix)
3 eggs (no-range)
1/3 cup of applesauce, (no sugar added)
1Tbs. of instant espresso powder
2 cups of grated fresh zucchini, (squeeze out excess water)
1/2 cup of unsweetened cocoa powder, sifted
1/4 cup of sugar
To make:
Heat oven to 350*f. Coat a Bundt pan with baking spray and then
a light dusting of flour. With a mixer, beat first 4 ingredients and 1/2
cup of water for 2 mins. Stir in zucchini. Pour into pan. Bake 33 to 40
minutes or until done. Cool 20 min. Transfer to a wire rack; In a pot
over medium-low heat, simmer cocoa, sugar and 1/2 cup of water for
5 mins, stirring often. Pour over cake. Garnish with mint leaves and
raspberries (or strawberries).
If you don’t have a bundt pan, use a regular cake pan.
Calories- 195 per serving.

Caramel Mocha Cupcakes!

3 eggs
1 1/4 cups of strong brewed coffee, (cooled)
1/2 cup of oil
1 package of sugar-free cocoa mix (1 oz.)
a package of cream cheese, 8 oz. leave on the counter to soften up
1 can of vanilla frosting
1/4 cup of caramel sauce
To make:
Heat oven to 350*F. Line 12 muffin tins. Prepare
cake with coffee (in place of water), oil and eggs as
package directs, adding cocoa mix. Divide among muffin tins.
Bake for 10 to 12 minutes. Cool. Beat cream cheese until smooth. Stir
in frosting and caramel: pipe onto cupcakes. Garnish with additional
caramel, toffee pieces and maraschino cherries.
Calories- 170 per cupcake
Health benefit of eggs- Improve eyesight. Eggs (mainly the yolks)
contain compounds that keep vision strong especially as you age.
