Don’t turn on the stove in this heat!

In many parts of the country it’s still hot and if you’re one who hates to
cook in this type of weather, there are always sandwiches.

But hold on, a sandwich made with white or wheat bread, isn’t that too much
for the digestion system to handle in this type of weather?
Yes, and for you, there’s a great alternative.

The alternative:
Using a whole cucumber as the bread.
Cucumbers?
Yes, hollow one out and fill it with the things you and your family love.
Lunch meat (baloney, salami or ham), or use some leftover chicken
breast for a chicken-salad sandwich or use up those cans of tuna in your
pantry.

And to help you along, here’s a recipe for a great tasting “low-carb” sandwich.
The recipe:
Cucumber Tuna Boats!
Ingredients:
1 tomato
2 regular or English cucumbers.
2 cans of tuna, (in water), drained
2 Tbs. of olive oil
1 Tbs. of fresh or dried dill
1 tsp. of fresh lemon juice
Dill sprigs and lemon wedges for garnishment (optional)
To make:
Halve a tomato; thinly slice. Slice ends off cucumbers, cut in half lengthwise.
Using a small spoon, scoop out 2/3 of the flesh and seeds, toss them out.
Pat insides of cucumber halves dry.
In a bowl, combine tuna, olive oil, chopped dill and lemon juice. Layer 2 cucumber
halves with tomato slices and tuna mixture. Top with remaining cucumber halves;
halve crosswise. Transfer to serving plates. If desired, garnish with dill sprigs and
lemon slices.
Calories per tuna boat- 290
Carbs-4g.
Prot-28g.

The best way to hollow out a cucumber:
Removing seeds and some flesh from cucumbers creates a deep groove
that helps hold the fillings so they don’t keep falling out the sides every time
you bite into it.
So, cut your cucumber in half lengthwise, then run a melon baller or a rounded
measuring spoon down the middle, leaving a 1/4″ border.

One more tip: If you grow tire of using cucumbers, remember, you can
also use thick green leaves like cabbage, kale or collards (steam first to soften)
or Romaine lettuce, tomatoes, cut 2 thick slices and place your beef or
turkey burger between the slices, and lastly, green squash (zucchini).
