Low-Carb Dinners For Easier Weight Loss!

you’re in luck.
Listed below, are recipes for two delicious dishes that are both slimming
and can be made in minutes.
Slimming recipe no. 1-
Saucy Stuffed Cauli Peppers!
Leave out the carb-heavy rice and use cauliflower to make these satisfying
and filling stuffed peppers.
Ingredients:
4 large peppers
1 lb. extra-lean ground beef (or turkey)
2 cups of riced cauliflower*
1 cup of chopped onions
1 1/2 cups of marinara sauce*
1/4 cup of shredded mozzarella
Seasonings-
1 tsp. of garlic powder
1 tsp. of onion powder
3/4 tsp. of Italian seasoning
* Cooking tip: To make cauliflower rice-use a box grater. To do:
Separate cauliflower into large florets. Working with one piece at
a time, grate each using the largest holes until reduced to small,
equally sized pieces.
* Look for a low-carb or no-carb sauce, one to try: Yo Mama’s Marinara sauce.
To make:
Heat oven to 400*F. Trim stems of peppers. Discard seeds. Place in 8″ square
baking pan, cut sides up. Bake until soft, 25 to 30 mins.
Coat skillet with cooking spray; heat over medium-high heat. Add beef, cauliflower,
onions, seasonings, 1/4 tsp. of salt and pepper. Cook, stirring 8 to 10 mins. until
beef has fully cooked and veggies have softened.
Reduce heat to low; add sauce. Cook, stirring, until hot, 2 mins. Blot away excess
moisture from peppers. Evenly fill: sprinkle with cheese. Bake until cheese melts,
3 to 5 mins.
Calories per pepper-290, Carbs-26g. Prot-30g.
Slimming Recipe No. 2-
Easy-Zoodle Low Mein!
Avoid the carb-heavy (made with rice or noodles) Low Mein at your
local Asian restaurant and use zucchini (zoodles) instead.
Ingredients:
2 Tbs. of reduced sodium soy sauce
1 tsp. of chopped garlic
3 cups of Asian-style stir fry vegetables
1 cup of quartered mushrooms
1 1/2 lbs. of zucchini*
Seasonings:
1/4 tsp. of ground ginger
1/4 tsp. of onion powder
1/8 tsp. of salt
* Cooking tip:
Turn zucchini into thin strips (zoodles) using a Spiralizer or a
julienne vegetable peeler. (Find a spiralizer or vegetable peeler
at Walmart or Target).
To make:
To make sauce, in a small bowl, combine soy sauce garlic, and seasonings.
Mix well. Coat a large skillet or wok with cooking spray; heat over medium-high
heat. Add the veggies and mushrooms. Cook and stir until veggies are hot and
mushrooms have softened, about 5 mins. Add zucchini. Cook and stir until hot
and slightly softened, about 3 mins.
Transfer the veggies to a strainer; drain excess liquid, Return wok to medium-high
heat; add veggies and sauce. Cook and stir until evenly mixed and mostly absorbed,
for 2 mins.
Calories per serving- 135, Carbs-47g. Prot-9g.
