As the days get shorter and the temperatures get colder, many of us
will turn to heavier carbs, (pasta, sweet potatoes, turnips and butternut squashes)
and to make these carbs more tasty and decadent, we’ll use dressings and sauces.
But if calories are a concern and you’re concerned about weight gain, then you
must try one or all three of the recipes listed below.

Recipe no.1-
Spicy Queso-
For nacho lovers who want a dairy-free twist on queso, this is the recipe for
you. To make:
Soak 1 cup of raw cashews in boiling water for 30 mins. Pour out the
water and put the cashews into a blender with 1/4 cup of water.
Blend until smooth. Put the cashews into a small saucepan with
1 cup of salsa on medium heat for 20 mins.
Serve as a dip with cut up veggies or your favorite gluten-free
chips or pour over nachos.

Recipe no. 2-
Cheesy Goodness-
This kid-friendly sauce is great for broccoli and other steamed
and boiled veggies, kids hate to eat.
To make:
Roast 2 cups of butternut squash at 400*F for 20 mins. or until
softened. Remove from the oven, peel and cut into chunks.
Put the squash into a food processor, blend until smooth.
Heat the squash up in a saucepan along with 1/2 cup of milk and
1/2 cup of cubed cheddar cheese, until smooth.

Recipe no. 3-
Want a Alfredo sauce without the calories and heart damaging
ingredients? Try this recipe.
To make:
In a pot over medium-high heat, boil 1 qt. of chicken stock
and 4 cups of cut-up cauliflower for 10 min. drain. Add 1 tsp.
of garlic powder and 1/2 cup of milk. Stir well and pour over
faux pasta (Zoodles), regular pasta, stir-fried vegetables
or broiled fish or chicken.
