Do you plan on growing a garden this year? If not, do you plan on visiting a Farmer’s market?
Well, if you do grow your own food or buy it, make sure you buy or grow beets, carrots and
broccoli.
Why, these foods?
You can use the tops from beets and carrots and the broccoli stalks.
Use them to make great tasting sauces and a side dish (salad).

So, if you enjoy tasty dishes and saving money, then you must stop throwing
out some parts of the vegetables and use them to make the following.

a) Broccoli Stalks Sauce!
To make a delicious sauce for rice, stir-fried vegetables or mashed cauliflower,
do this…Boil 4 cups of chopped broccoli stems until tender, 5 mins. Drain.
Transfer to a blender; pulse with 2 Tbs. of olive oil into rice-like consistency.
A tasty dish to make: Toss the sauce with 3 cups of rice (brown or white), 1
cup of peas, 1 Tbs. of soy sauce and 1/2 tsp. of salt.

b) Carrot Tops Pesto!
If you’ve never eaten carrot tops, you’re about to take your taste buds on a ride.
The tops have a sweet, earthy flavor that makes an ideal addition to a classic sauce.
To make:
In a blender, process 2 cups of chopped carrot tops, 1 cup of chopped fresh basil,*
1/3 cup of grated Parmesan, 1/4 cup of olive oil, 2 Tbs. of pine nuts, 1 tsp. of grated
lemon zest and 1 clove of garlic clove until almost smooth; season with salt and pepper.
Pour over rice or gluten-free pasta.
* Basil- If basil is too pricey, you can always use fresh parsley or cilantro.

c) Beet Greens Salad!
The tops of beets are slightly bitter with a tender texture that complements subtly
sweet red onion and lightly toasted walnuts.
To make:
Chop 3 cups of beet leaves (stems removed). Toss with 1/4 red onion (cut into
1/2″ slices), 1/4 cup of kidney beans (rinsed and drained), 1/3 cup of walnuts
and 2 Tbs. of vinaigrette (Greek or Italian).
