Steak For Valentine’s Day!

Ladies, if your man is demanding steak for dinner this Valentines’s day, but your against it, give in-
he’s actually good for him.

How so?
In regards to his weight.

Rib-eye, flank steak, a T-bone, all fire up metabolism and eating a
few ounces each day activates genes that promote fat burning
inside abdominal cells, helping them burn an extra 100 calories
of stored fat daily.
Plus, if you need further proof about the benefits of steak

So, if you’re concerned about it (steak) being too fatty or harmful to
his cholesterol, don’t be, it’s actually a diet food.

What should you be concerned with?
The sides that go with that steak: steak fries, mashed potatoes,
gravy, rolls, buns, slices of apple pie or peach cobbler.
To ensure that he stay’s on track and remains healthy, make the
following rib-eye steak recipe listed below.

Recipe:

Coffee-Rubbed Rib-Eye Steak!
Ingredients:
1 tsp. instant coffee (granules) *
1/2 tsp. ground ancho chile pepper
1/4 tsp. dried oregano
1/4 tsp. garlic powder
1/8 tsp. salt
1 (1lb.) bone-in-rib-eye steak
1/4 cup low sodium beef broth
1/4 cup red wine
* not a fan of coffee- use 2 tsp. ground cumin

To make:
In small bowl, mix the first 5 ingredients
together and rub all over the the rib-eye.
Coat a large nonstick skillet with cooking spray (Pam)
turn heat to medium-high. Add the steak; cook for about 5
minutes (for medium rare) and then turn over and cook for
another 5 minutes. Transfer to a platter, add the broth and wine to skillet;
cook until reduced by half, 5 to 7 minutes, and pour over steak, slice it up
and serve.
Two tips:

a) To give the sauce a richer flavor, add a Tbs. of butter to the
sauce once it’s reduced.
b) If you’re concerned it may be too tough, you can marinate it
using one of these methods:
1) coat the steak in plain yogurt (both sides) and leave in the
refrigerator overnight and in the morning remove the yogurt.
2) Place the steak on the counter an hour or two before cooking,

and coat both sides with salt. When ready to cook, remove the salt
with a few pieces of paper towel.
This technique is used by chefs all around the world, letting the steak
sit out in room temperature and coating it with salt will definitely tenderize
it.
And if you have a cat or dog, you may have to leave the steak in the oven
turned off of course.

To go with that steak, your man needs a vegetable,
here’s a recipe for Brussels sprouts.

Recipe:
Bacon-Roasted Brussels Sprouts

Ingredients:
2 slices of bacon
a container of fresh Brussels sprouts or look for frozen.*
1/2 cup of red onions, thinly sliced
1/4 tsp. fennel seeds (crushed)

1 tsp. white balsamic vinegar
* If using frozen Brussels sprouts, take them out
of the freezer 20 to 30 minutes before cooking them.
Make sure to remove excess water and halve them.

To make:
Heat oven to 375F. In a large nonstick skillet over
medium heat cook bacon until browned and crisp
7 to 8 minutes. Drain on a paper towel. Reserve the

bacon drippings. When cool enough to handle,
break bacon into small pieces.

Coat small rimmed baking sheet with cooking spray.
Trim and halve Brussels sprouts lengthwise. In a large
bowl, combine sprouts and onion with reserved bacon
drippings, fennel seeds, 1/4 tsp. salt and 1/8 tsp. black pepper,

toss to coat. Roast about 30 to 35 minutes (depending
on how fast your oven cooks) until the sprouts are lightly
browned, stirring halfway through cooking time.
Transfer to a bowl and drizzle with the balsamic vinegar, tossing
them well and then throw in the bacon bits.

And lastly, what’s a nice steak and Brussels sprouts 
dinner without a refreshing beverage? 
It’s just a steak and vegetable dinner. 
Well, here’s a recipe for a nightcap, a mulled wine 
nightcap. 

The recipe: 
“Be Mine Mulled Wine” 
This spicy nightcap is the perfect beverage to cozy 
up to a roaring fire. 
To make: 
In a pot over medium-low heat, bring 1 bottle of
wine,  1 sliced orange, (clean orange thoroughly)
2 cinnamon sticks, 1/4 cup of
orange juice and 1/4 cup brandy to a simmer. 
Cover, cook 15 minutes, then remove from the heat, allow to cool a bit and then serve.
