With school back in session in most parts of the country, many schools will be
trying to raise money.
Schools raise money for a myriad of reasons, and if your kids’ school is
planning on raising money by holding bake sales and you need some ideas,
you’re in luck.
Here are 4 “healthy” sweet treats that are not only good for kids and adults,
but they also taste great.

a) Good-For-You Fudge Brownies-
Ingredients:
1 Avocado
2 Eggs
1 cup of maple syrup
1 tsp. of vanilla extract
1/4 cup of olive oil
1 1/2 cups of dark chocolate chips, (melted)
1/2 cup of cocoa powder
1 cup of flour
1 tsp. of baking powder
To make:
Heat oven to 350*F. In a blender, blend together the peeled and diced avocado, eggs,
maple syrup, vanilla and oil and pour into a big bowl, add the choc. chips, flour,
baking powder and cocoa powder. Stir until blended and pour into a greased or parchment
paper lined baking pan. Bake for 20 to 30 mins. Insert a knife into the center and if it (the
knife) comes out clean, the brownies are ready.
Calories per brownie- 285, Prot-3g. Carbs-40g.
b) Banana-Coconut Cupcakes-
For all of the future buyers who want a sweet treat that’s dairy and gluten-free.
Ingredients:
2 ripe bananas- mashed
1/2 cup of dark honey
3 eggs
1 lemon, juiced
1/4 cup of coconut oil, melted
1 Tbs. of baking powder
2 1/2 cups of almond flour
2 cans of coconut milk, (14 oz.) chilled overnight
To make:
Heat oven to 350*F. In a bowl, mix bananas, 1/4 cup of honey, eggs, 2 Tbs.
of lemon juice, oil, baking powder and flour. Spoon into 12 lined muffin wells.
Bake for 30 mins.Scoop cream from top of milk cans; beat with remaining
honey. Pipe on cupcakes; drizzle with lemon curd, if desired.

c) Pear Streusel Muffins-
Take advantage of low-priced pears this fall season and use them to
make these tasty treats.
Fall-flavored dessert.
Ingredients:
2 1/2 cups of whole wheat flour, (divided)
2 tsp. of cinnamon
1 Tbs. of baking powder
1 cup of coconut sugar, (divided)
3/4 cup of olive oil
1/2 cup of milk
3 eggs
1 tsp. of vanilla extract
2 very ripe pears, peeled and diced
1/2 stick of butter
Heat oven to 350*F. In a bowl, mix 2 cups of flour, 1 tsp. of
cinnamon and baking powder. Add 3/4 cup of sugar and the next 4 ingredients.
Toss pears in 1/4 cup of flour; fold in batter. Spoon into 12 lined muffin wells.
Mix butter and remaining flour, sugar and cinnamon, sprinkle on muffins.
Bake for 20 to 25 mins.

d) Triple-Chocolate Muffins
Don’t wait till Halloween or Christmas to enjoy chocolate, make these muffins
so you can have some today.
Ingredients:
2 1/2 cups of semisweet chocolate chips, divided
3 eggs
1 cup of nonfat Greek yogurt (plain)
1/4 cup of agave nectar
1 cup of flour
1 Tbs. of baking powder
1/4 cup of cocoa powder
1 block of white chocolate (about 2 oz.)
To make:
Heat oven to 350*F. In a heat-proof bowl, microwave 1 1/2 cups of
chocolate chips 30 secs to 1 min. Whisk in the next 7 ingredients.
Spoon batter into 12 lined muffin wells, Bake for 20 to 30 mins. In heatproof
bowl, microwave remaining choc. chips for 1 minute; drizzle over muffins.
Garnish with chocolate shavings and raspberries, if desired.
