If you’re a regular here, then you may remember the post about making sandwiches
using veggies and beans and not meat. The sandwich idea is great for those who
may not want to eat veggies as a side dish or added to salads, but place them
(the veggies) between 2 slices of bread and you may be more apt to eat them.

And today’s post, is another sandwich idea, a fruit sandwich to be exact.
The fruit: Cucumbers.
Yes, they’re a fruit (because of the seeds) and luckily, they’re plentiful and
inexpensive right now. And if you want more hydration (without drinking
tons of water) a younger complexion, thicker hair, better and regular bowel
movements, lower blood sugar levels and better digestion, then you need to
add more of this fruit to your daily menus.

With that said, to help you get more of this fruit into your system, here’s
a recipe for a cucumber sandwich.
Flavor this sandwich with your favorite herbs, cheese, spices and lemon
or lime juice.
The ingredients:
1 cup of cucumber, (regular or an English cucumber)
1/8 tsp. of salt
2 Tbs. of low-fat plain yogurt
2 Tbs. of feta cheese
your favorite herbs- dill, mint, parsley or cilantro
1/4 tsp. of lemon zest
a little lemon juice
1/8 tsp. of black pepper
1/2 cup of alfalfa sprouts (for the fiber and crunch)
4 slices of good bread (sprouted or gluten-free)
2 thin slices of onion
To make:
Place the cucumbers in a bowl or on a plate and sprinkle some salt
over the cut up slices. Leave for 10 minutes.
Combine yogurt, feta cheese, herbs, lemon zest and juice and black pepper
in a bowl. Mix well.
Drain the cucumber; place on a sheet (or two) of paper towel and pat dry.
Doing this draws the extra water out of the cucumber slices. Add the slices
to the yogurt mixture and stir until well-coated. Place this mixture on top of
one slice of plain or toasted bread, top each sandwich with a slice of onion.
Add the top slice of bread and cut each sandwich in half.
That’s it, a healthy summer sandwich, using a nutrient-dense food (fruit)–
the cucumber.

More tips:
Eat this type of sandwich for the next few months and swap out the yogurt
and feta cheese for avocado slices (or mashed), mustard, tomato slices,
provolone and some beans (mashed chickpeas or black beans).
Enjoy.
