Gluten-Free Treats From The Watermelon Patch!
If your local grocery store or road-side stand or farmers’ market is selling watermelon
do yourself some good and stock up on it.
Stock up on watermelon?
Yes, and instead of cutting it down the middle and serving it by the slice, use it to
make the following gluten-free treats.
Plus, all of the recipes listed here, require “No-Cooking” Yea, keep the stove off during
the dog days of July and August.
Treat No. 1-
Spicy Watermelon Peach Gazpacho!
This gluten and dairy-free cold soup is made with watermelon and peaches.
Ingredients:
2 cups of watermelon chunks
2 peaches, ripe, Pitted and peeled
2 Roma tomatoes, coarsely chopped
1 small cucumber, peeled and diced
1 Tbs. of chopped jalapenos
1/4 cup of diced red onions
1/4 cup of packed cilantro
1 Tbs. of red wine vinegar
1/4 cup of olive oil
To make:
In a blender, puree all of the ingredients until smooth. Season to
taste with salt and pepper. Refrigerate at least 1 hour before serving.
Garnish with heart-shaped toasts, diced tomatoes and cucumber, if desired.

Treat No. 2-
Berry-Watermelon Swirl Parfaits!
A gluten-free treat that uses yogurt instead of Ice cream.
Ingredients:
2 cups of watermelon chunks
6 fresh or frozen strawberries
1/2 tsp. of vanilla extract
2 Tbs. of dark honey
4 cups of plain yogurt
1/2 cup of roasted peanuts, chopped *
To make:
In a blender, blend watermelon, strawberries, vanilla extract
and honey until smooth. Divide yogurt evenly among 4 dessert glasses.
Divide watermelon puree evenly among glasses over yogurt. With a spoon
or knife, stir yogurt and watermelon mixture without fully combining to
create swirls. Sprinkle some peanuts on top. Chill until ready to serve.
Calories per serving, 340, Prot-19g. Carbs-36g.
* Peanuts- If you’re not a fan of peanuts, go ahead and use a nut (chopped
walnuts or cashews) or seeds-sunflower, hemp or pumpkin.
Treat No.3-
Balsamic-Kissed Melon Salad!
Yes, it’s summer, and for many that means some type of green salad
on the table. Give it (the lettuce and tomato salad) a rest and serve
family and friends this gluten-free watermelon salad.
Ingredients:
4 cups of watermelon chunks
4 oz. cubed feta cheese
2 limes, zested and juiced
1/4 cup of minced onions (red or yellow)
1 Tbs. of balsamic vinegar
1/4 cup of olive oil
1 Tbs. of agave nectar
1/4 cup of chopped mint, (fresh)
To make:
In a large bowl, combine the first 2 ingredients. In a smaller
bowl, whisk 2 Tbs. of lime juice, 1 tsp. of lime zest and remaining
ingredients; season to taste with salt and pepper. Drizzle over the
watermelon mixture. Garnish with fresh mint leaves if you so desire.
Calories per serving-255, Prot-5g. Carbs-20g.
Treat No. 4-
Minted Watermelon Lime Sorbet!
Another dessert treat that’s gluten and dairy-free, and another bonus:
it’s low calorie to boot.
Ingredients:
4 limes, zested and juiced
1/2 cup of sugar
a few sprigs of mint and some leaves (for garnish)
4 cups of watermelon chunks
To make:
In a bowl, combine 1/2 cup of water, 2 Tbs. of lime juice, 1 Tbs.
of lime zest and sugar. Chill for 15 mins. or until sugar dissolves.
In a blender, blend the sugar mixture, the watermelon and some
mint leaves. (not too many), until smooth. Pour into a wide, shallow
dish. (A glass dish). Place the dish in the freezer for 4 hours or more
hours or until the sorbet has crystallized. Remove from the freezer;
scrape with a fork. Transfer to a food processor; puree until smooth.
Freeze again for another hour or until frozen through. Scoop into bowls
and garnish each bowl with a mint leaf or two.
