Are you a fan of Taco Tuesday?
Are you a fan of one pan cooking, (a cast iron skillet)?
Are you a fan of gluten-free meals?
Are you a fan of meals that take 30 minutes or less?

Well, you’re in luck, the following “good-for-you” taco meal
fits all 4 bills, and if you make a big pan of this recipe you
can it for Taco Tuesday or Taco Wednesday.

The Recipe:
Loaded Beef Taco and Veggies!

The Ingredients:
2 Tbs. of avocado or olive oil
1 small onion, diced
1 medium sweet potato, cut into small pieces
1 bell pepper, diced
1 lb. of ground beef
1 small zucchini, diced
2 tsp. of ground cumin
2 tsp. of smoked paprika
1 tsp. of chipotle chile pepper
1 tsp. of chili powder
1/2 tsp. of sea salt
1 can of diced tomatoes (14 or 16 oz.)
1 can of diced green chiles (14 oz.)
1 Tbs. of apple cider vinegar
Optional:
1/2 cup of Cheddar cheese
1/4 cup of cilantro or parsley (fresh)
1 avocado, pitted, peeled and diced
To make:
Move the rack in your oven to the top. Heat oven to 400 F Broil.
Heat up a large cast-iron* or ovenproof skillet over medium-high
heat; coat with oil. Place onion, sweet potato and pepper in skillet
in the pan and saute for 4 or 5 mins. or until softened.
Turn the heat down to medium; add ground beef and zucchini.
Cook until beef is no longer pink, about 5 or 6 mins. Remove any fat
from the skillet (use a large spoon).
Add the seasonings plus the salt to the beef and veggie mixture.
Mix until veggies and beef are coated; add the tomatoes, chiles and vinegar.
Continue to stir and simmer for 5 mins. If you plan on using cheese, sprinkle
it on the beef and veggies and place in the cast-iron pan in the oven for
3 or 4 mins. or until cheese starts to bubble. And lastly, garnish the final
dish with some cilantro (or parsley) and cubes of avocado.
