Gluten and Dairy-Free Appetizers For The Holidays!

a) Veggie Hummus Rounds-
As mentioned earlier, these appetizers are gluten free, so sweet potatoes
will serve as the bases.
To make:
Line a baking sheet with parchment paper. Slice 3 sweet potatoes into 1/2″
rounds (about 12 each); add to the baking sheet. Bake at 400*F until toasted,
30 mins. Arrange toasts on a platter; top with regular or beet hummus and sprinkle
with a few sunflower or pumpkin seeds for extra crunch.
Serves 18.
b) Bacon-Wrapped Dates-
If you and your guests are into sweet and salty treats, then this is the recipe for you.
To make:
Stuff each of 24 large pitted dates with 1 almond and 1 tsp. of vegan cream cheese.
Wrap each date in 1/2 slice thick cut bacon; secure with a toothpick. Bake at 400*F.
for 20 to 25 mins. Remove toothpicks; arrange on a platter.
Enough for 12 servings.
c) Smoked Salmon Bites-
No need for crostini in this recipe, sliced cucumbers will make for a great substitute.
To make:
Slice 1 seedless cucumber into 1/4″ rounds; top with 4 oz. of smoked salmon (cut
into bite-size pieces). In a bowl, combine 4 oz. of Boursin Dairy-Free Garlic & Herbs
abd 1 tsp. of lemon juice; season with pepper. Transfer to a piping bag; pipe onto
the salmon.
Enough for 15 servings.
Important tip: No need to buy a piping bag, you can make one using a plastic bag.
Fill a small plastic bag with the garlic and herb mix, and snip one end of the
plastic bag with scissors.
