Female Celebrities and Their Low-Cal Secrets!
You may think that most of your favorite celebrities only eat baked salmon and
salads and drink green smoothies to maintain their weight and youthful appearances,
and you’d be wrong.
Many celebrities continue to eat the dishes that appeal to them, but only slimmed
down versions.
In other words, if they want pizza, it’s made with a cauliflower crust and the same thing
goes for tater tots, (use cauliflower) and if you want to continue enjoying some of
your favorite foods (like Reese Witherspoon, Gwyneth Paltrow and Valerie Bertinelli)
without all of the extra calories, just continue reading.
1) Reese Witherspoon-
The “Legally Blonde” star is originally from Tennessee and like most Southerns-
Ms. Witherspoon loves fried chicken, and to continue to indulge, she now eats a
low-cal version of her favorite:
Chicken Tenders!
To make:
Use boneless chicken breast and cut each breast into four 1″ slivers
(to make chicken tenders)
Heat oven to 400*F. In a bowl, mix 1/2 cup of finely chopped pecans, 1/2 cup of panko
crumbs and 1/4 cup of grated Parmesan. In a second bowl, mix 1/2 cup of mayo
and 2 Tbs. of Dijon mustard. Coat 8 to 10 tenders in the mayo and mustard and then
then the crumbs and bake about 10 minutes each side or until golden brown and no
longer pink in the center.
Calories cut- 350.

2) Trisha Yearwood-
Another Southern (like Ms. Witherspoon) from Georgia and that means she loves all
food associated with the South: fried chicken, okra, spareribs, chicken-fried steak,
greens, peach cobbler and potato salad and to make a low calorie potato salad,
do like Ms. Trisha and use sweet potatoes.
To make: Boil 3 to 4 medium-sized potatoes (with the skin) for 30 to 40 minutes
or until you’re able to easily pierce them with a finger or fork.
Remove them from the water, let cool and peel them. Cut them into 1″ cubes and
set aside. Now onto the second part- in a large bowl, mix 1/2 cup of mayo,
1/2 cup of Greek yogurt, 1/2 cup of chopped scallions, 1 chopped and seeded red
pepper, 2 Tbs. of chopped chives, 1 tsp. of orange zest, 2 Tbs. of apple cider vinegar
and 1/2 tsp. of Tabasco sauce. Add the potatoes and coat well. Take a taste and
add salt and pepper if needed. Refrigerate for a few hours before eating or overnight.

3) Gwyneth Paltrow-
Ms. Paltrow receives a lot of criticism for her devotion to “clean eating”
but it must be working because she’s closing in on 50 and still looks
incredible and if you want to eat a “clean” type of muffin like Ms. Paltrow,
do the following.
To make:
Turn oven to 350*F.
Line a muffin pan with cupcake liners. Whisk 1/2 cup of safflower (or avocado)
oil, 1/2 cup of soy milk, 1/2 cup of “real” maple syrup and 1/4 cup of agave
in a bowl. In another bowl, mix 1 cup each of whole and white spelt flour,
2 tsp. baking powder and 1/2 tsp. of salt. Stir together dry and wet mixtures;
fold in 1 1/2 cup of blueberries (fresh or frozen). Divide batter among liners
and bake until golden brown about 20 to 25 mins.

Now, it’s onto to the cruciferous vegetable that’s being used to
make everything from rice to tater tots to pizza.
And that cruciferous vegetable: Cauliflower.
Listed below are recipes from stars using the once unpopular veggie.
4) Patricia Heaton-
Ms. Heaton has all boys and like boys, they love to eat.
Ms. Heaton decided to slim down their favorite Buffalo wings recipe.
To make:
Cut 1 head of cauliflower into florets. Whisk together 1/2 cup of flour,
1/2 cup of water and 1/2 tsp. of garlic powder; add the florets, then
toss until evenly coated. Cook on a greased baking sheet at 450*F for
15 to 18 minutes. In a small bowl, make a hot sauce. Mix 1/4 cup of hot
sauce and 2 Tbs. of melted butter. Pour over the Buffalo bites and bake
for another 15 to 20 mins.
Calories cut- 240.
5) Valerie Bertinelli-
Ms. Bertinelli shares her passion for food with all of us through the Food
Network, books and magazine articles and like Ms. Heaton, she uses
cauliflower. Her favorite way to use it is to make Tater tots.
To make:
Turn oven to 425*F. In a bowl, mix 1 bag of thawed hash browns and
1 head of grated cauliflower, 1 egg and 1/2 cup of flour; season with
salt and pepper. Form into 2″ logs; arrange them on a baking sheet
and bake for 20 to 25 mins.
Important tip: If your oven cooks fast, please keep an eye on them
and don’t let them overcook (over-brown).
Calories cut- 245.
6) Natalie Morales-
Like her kids, newswoman Natalie Morales loves pizza and to continue to
indulge she makes her own, her own lower calorie version.
Use cauliflower and Parmesan cheese for the crust.
To make: Turn oven on to 400*F. –
In a microwave-safe bowl, microwave 6 cups of riced cauliflower,
1 egg, 1/2 cup of shredded and 1/4 cup of shredded mozzarella; add seasonings.
Press into a 9″ round baking sheet and add the toppings of your choice.
(slivered onions, tomato sauce, bell peppers, mushrooms,
pepperoni, mozzarella, turkey sausage or pineapple).
Bake for 15 to 20 minutes.
Calories cut- 200 per slice.
Important tip:
Look for riced cauliflower in the frozen food aisle or buy a whole head of
cauliflower and rice it yourself. Not sure how? Go to youtube.com and type
