Hey, it’s that time of year when visits to your local farmers’ markets or farm stands are
as common as a dip in the pool, and if you do plan on visiting a farm stand or market,
to load up on peaches.

Why peaches?
Peaches contain cartenoids, (antioxidants) that neutralize the damaging free
radicals that cause skin aging and fine lines.
But wait, there’s more, peaches can also protect your skin from the harmful effects
that come from too much exposure to the Sun.
Yes, natural sunscreen.

The Dessert:
Fresh Peach Shortcakes!
Ingredients:
5 to 7 Peaches, peeled and sliced (save a few slices for garnish)
1/4 cup, plus 2 Tbs. light brown sugar, divided
2 1/2 cup of baking mix, (Bisquick or Jiffy)
2/3 cup buttermilk
4 Tbs. of melted butter
1 1/2 tsp. of almond extract
1 1/2 cups of whipped cream
To make:
Heat oven to 425*F. In a bowl, mix peaches and 2 Tbs. brown sugar.
In a separate bowl, combine baking mix, buttermilk, butter, almond extract
and 1/4 cup of sugar until wet dough forms. Spoon 10 mounds onto greased
baking sheet. Bake 10 to 12 mins. or until lightly browned. Let cool; slice
shortcakes horizontally. Fill with whipped cream and fresh slices of peaches.
Calories: 230 per shortcake.
