The month of August is soon coming to an end and for many that means back to school,
cooler weather, the Fall season and putting away the grill.

If you’re one who loves to cook outdoors, here are a few tips from professional “grillers”
to make your grilled foods taste even better. And after those tips, we’ll also give you
3 tips on how to make your barbecue sauces taste even better.

Tip No. 1-
Juicier Meats-
Use marinades. They (marinades) tenderize meats and lock in moisture and
one marinade that’ll do that is a Citrusy-Vinegar and Herb marinade.
To make:
Mix 1 part oil, 1 part vinegar and some of your favorite herbs. Use 1/2 cup of
marinade per pound of meat. Place your beef, fish or chicken in a large ziploc
bag, add the marinade, seal up and place in the refrigerator for an hour or several
hours, making sure to turn the bag every 30 mins.

Tip No. 2-
Spice Blends-
Very popular in Southern states, using rubs on meats is a sure fire way to increase the
flavor. To make: Mix 2 tsp. of cumin, 1 tsp. of ginger, 1 tsp. of salt and 1/2 tsp. of
cayenne pepper. Rub this into steak or chicken (breasts or thighs) leave on for 10 to
20 mins. before grilling. Another tip: Use the spices and herbs you prefer, if you like
dried oregano, turmeric and paprika; use them.

Tip No. 3-
Smoky Barbecue-
If you cook over wood and want that smoky flavor to infuse your meat and vegetables,
do the following…Soak 2 cups of wood chips for 30 mins. add hot coals or wrap in
foil and set on grill grates. Apple wood adds mild notes and for stronger smoke-try hickory.

And now, it’s time to rev up the flavor of your barbecue sauces.
Tip No. 1-
Fruity-Tasting barbecue-
If chicken, pork or fish are on the menu (grill), cook 2 tsp. of chopped fresh
ginger in 2 tsp. of oil over medium heat until fragrant, for 3 mins. stir in 1 cup of
sugar-free barbecue sauce and 2 Tbs. of sugar-free peach jam. Cook until flavors
blend, let cool and then add to your fish or meat.

Tip No. 2-
Zesty Burgers-
Are you tired of the same old tomato ketchup? Try this: Heat 1 cup of sugar-free
barbecue sauce over medium heat until simmering; then add 1 Tbs. of Dijon mustard
and 1 Tbs. of Worcestershire sauce. Cook until flavors blend and then add to pork ribs
or cooked hamburgers.

Tip No. 3-
Smoky-Flavored Meats-
Break out the bacon for this tasty sauce. To make: Cook 4 to 6 strips of bacon until
crisp, sprinkle on some paprika and then cut into bite-sized pieces and then stir
into 1 (or 2) cups of sugar-free barbecue sauce. Place this sauce on steaks, ribs or
chicken, during the last few minutes on the grill.
