End of Summer Recipes For Better Sleep!

In some parts of the U.S. the next 2 months will be the perfect time to
buy or (pick your own) tomatoes.
And if you plan on picking or buying tomatoes, use them to make the
following recipes.
* Pico de Gallo
* Balsamic Caprese Salad Skewers
Why these 2 recipes, you ask?
Because they taste great and they’ll help you sleep.
That’s right, the 3 fruits that are always mentioned for deeper and longer
sleep are cherries, (tart cherry juice), a banana or a slice of watermelon, but
new research says that tomatoes (a fruit) can also help you sleep more
soundly.
The researchers say that lycopene, which is a compound that gives tomatoes
their bright hue, also reduces stress hormones so you can get to sleep and
stay asleep.
Now, onto the recipes:
a) Balsamic Caprese Salad Skewers!
If you need a recipe for a Brunch or an elegant outdoor party, you
can’t go wrong with this recipe.
Ingredients:
3/4 cup of balsamic vinegar
2 Tbs. of olive oil
2 Tbs. of chopped fresh basil and make sure to save some additional leaves.
1 clove of garlic, minced
24 fresh cherry tomatoes
24 cocktail skewers
To make:
In a pot over medium heat, bring the vinegar to a boil. Cook until syrupy,
5 to 7 mins.
Let cool. In a bowl, mix oil, 2 Tbs. of chopped basil, garlic, 1/2 tsp. salt
and 1/8 tsp. of black pepper, stir in mozzarella and tomatoes; thread
onto skewers. Arrange on a platter. Drizzle with the vinegar. For an
elegant looking platter-place a basil leaves around the platter and on top
of the tomatoes.
Calories per serving- 2 skewers-200, Prot-8g. Carb-8g.
b) Pico de Gallo-
This dish can be served with chips or eaten as a salad without the lettuce.
Ingredients:
2 limes
1 lb. of tomatoes, seeded, diced
1/2 cup of chopped red onions
1/4 cup of fresh cilantro
1 clove of garlic, minced
1 tsp. of green Tabasco sauce
3 cups of tortilla chips
To make:
Grate 1/2 tsp. of zest and squeeze 2 Tbs. of juice from the limes.
In a medium bowl, combine the tomatoes, onion, cilantro and garlic,
Tabasco sauce, lime zest and juice, and the salt and pepper. Transfer
to a big bowl and serve with chips.
Calories per medium-sized bowl-90, Prot-2g. Carbs-15g.
