Double Duty Food Rxs!
If you ever made chicken and you use it for just one meal-
say baked chicken one night, and the leftovers are added to
soup, broth or a stir-fry, that food is called a “double-duty” food
and listed below are 3 recipes that contain artichokes, peas and
eggplant that can also be used as double-duty foods.
a) Marinated Artichokes!
To make:
In a bowl, stir together 1 jar of marinated artichoke hearts (drained)
1/2 cup of drained roasted and chopped red peppers, 1/2 cup of pitted
green olives, 1 Tbs. white balsamic vinegar, 1/2 tsp.of salt and 1/4 tsp. of
black pepper.
Use this recipe and add it to bruschetta or spoon it atop some grilled
chicken or fish.
b) Green Pea Pesto!
If you’ve been buying pesto, it’s time to stop and make your own.
To make: In a food processor or blender, pulse or blend 1 package of
frozen peas, (thawed and drained), 1 clove of garlic, 1/2 cup of grated
Parmesan cheese, 1/2 tsp. of salt and 1/4 tsp. of black pepper until smooth.
While this is blending, slowly pour in 1/3 cup of extra-virgin olive oil
until combined.
Use this tasty pesto on top of bruschetta or as a dressing for a green,
pasta or potato salad.
c) Tomato-Eggplant Condiment!
And it sometimes goes by its other name: Caponata.
This is a tomato and eggplant flavored condiment.
To make:
Chop 1 small eggplant, 1 red onion, 1 rib of celery, 1 clove of garlic,
4 plum tomatoes and 3 Tbs. of capers. In a skillet over medium heat,
cook veggies in 1 Tbs. of oil for 8 to 10 mins. Stir in 1/4 cup of red wine
vinegar and 1/4 cup of chopped fresh basil.
Use this condiment on bruschetta or sandwiches.
d) Italian-Style Bruschetta!
We mentioned bruschetta 3 times and if you need a recipe,
here’s one.
Ingredients:
8 slices of Italian bread, cut into 3/4″ thick
2 cups of cherry tomatoes, quartered
4 oz. of crumbled feta cheese
3 cloves of garlic, minced
3 Tbs. of olive oil
Thinly sliced basil, (optional)
To make:
Prepare grill for medium-high direct heat cooking. Grill bread slices,
flipping once, until toasted, about 30 secs. per side. In a bowl,
combine tomatoes, feta, garlic, olive oil, 1/4 tsp. of salt and 1/4 tsp. of
black pepper; divide evenly among bread slices. If desired, top with
chopped basil.
If you don’t have a grill, you can use the oven to make this dish.
