No time to make an elaborate dessert this Easter or maybe you just
don’t want to spend money on a dessert from the bakery, that will only
go uneaten, no problem, here are five desserts you can make in a hurry.

1) Almond-Cherry Mousse-
In a bowl, pour a can of cherry pie filling along with a container of
thawed whipped topping. Serve garnished with crushed amaretti
(or sugar) cookies.

2) Stovetop Blueberry Crumble-
In a nonstick skillet, heat 2 cans of blueberry pie filling mixed with
a squeeze of lemon juice and a pinch of ground nutmeg over low
heat. Top with crumbled gingersnaps and vanilla Ice cream.

3) Frozen Peach Melba Smoothie-
In a blender, combine frozen peach slices, raspberry yogurt and
enough peach nectar or juice blend to moisten ingredients.
Puree until smooth, adding more nectar or juice as needed to
thin out. Top with swirl of raspberry preserves and whipped topping.

4) Mini Ice Cream Sandwich-
Spread a chocolate wafer cookie with a tablespoon or two of Ice
cream; top with another cookie, then roll side in flaked coconut.
Freeze until ready to serve.

5) Chocolate Monkeys-
In glasses, layer chocolate pudding with sliced banana, toasted flaked
coconut, whipped cream and chocolate shavings.
