that milk is doing to your body?
Well, believe it or not, you can still indulge in your favorite treats and
not consume dairy.
How?
By following the recipes listed below, dairy-free recipes.

Dairy-free recipe no. 1-
Mixed Berry & Brownie Treat!
Ingredients:
1 can of chickpeas (15 oz.) do not drain or rinse
1/2 cup of powdered sugar
1/4 tsp. of cream of tartar
1 Tbs. of vanilla extract
4 egg yolks
1/4 cup of granulated sugar
1 package of prepared brownies, (make them from scratch or buy 6 from
the store or bakery)
1 lb. of mixed berries
To make: Drain chickpeas over large bowl to catch the liquid; reserve chickpeas
for another use. With mixer on high speed, beat liquid and next 3 ingredients
for 5 mins. In a bowl over a double boiler, whisk yolks and sugar for 10 mins. Fold in
chickpea mixture. Layer brownies, chickpea foam and berries in a tall clear glass

Dairy-free recipe no. 2-
Heavenly Chocolate Mousse Cake!
Ingredients:
1 box of dairy-free chocolate cookie mix (15 oz.)
12 oz. of silken tofu, drained
1 Tbs. of vanilla extract
1/2 cup of sugar
1/4 cup of cocoa powder (top quality)
1 cup of dairy-free choc. chips (melted)
1 package of gelatin, (1/4 oz.)
To make:
Heat oven to 375*F. Prepare cookie mix as package directs.
Press dough into lined 9″ round springform pan. Bake 12 to 15 mins.
Let cool. In food processor or blender, puree tofu, vanilla, sugar,
cocoa and chocolate chips. In a bowl, whisk gelatin into 1/4 cup
of cold water; add to processor (or blender). Blend until smooth.
Pour mousse over crust. Chill for 4 hrs. Garnish with strawberries,
or raspberries and some choc. chips that have been run through a
blender or 20 to 30 secs. (until it resembles shaved chocolate).

Dairy-free recipe No. 3-
Strawberry Shortcake “Nice” Cream!
Ingredients:
4 cups of raw cashews, soaked in boiling water- 2 hrs.
1 1/2 cups of coconut milk
1 Tbs. of vanilla extract
1/2 cup of honey
1 lb. of strawberries, hulled
1 cup of crushed graham crackers
Red food coloring
To make:
Drain the cashews. In a high-powered blender, puree the first 4 ingredients
and a pinch of salt and blend until smooth; transfer to a large bowl. In a blender,
pulse strawberries until smooth with some chunks remaining. Fold strawberry
puree and graham crackers into cashew mixture. Using some food coloring,
make this dessert look pink. Pour into chilled Ice-cream maker bowl and churn
according to the manufacturer’s instructions. Freeze for at least 3 hours or until
set.

Dairy-free recipe no. 4-
Coconut Mocha Tiramisu!
Ingredients:
3 cans of coconut milk, (14 oz.)
chill the cans in the refrigerator overnight or in the freezer for an hour.
1/2 cup of maple syrup
1 Tbs. of vanilla extract
2 1/2 cups of brewed espresso
1/2 cup of cocoa powder
1/4 cup of coffee-flavored liqueur, (try Kahlua) optional
1 box of lady finger cookies, (14 oz.)
To make:
Scoop solid coconut cream out of cans of coconut milk.
Using an electric mixer, beat coconut cream, maple syrup and vanilla
for 5 mins. or until fluffy. In a bowl, whisk espresso and cocoa powder,
(and liqueur, if using) Dip lady fingers into espresso mixture; place half
in a single layer in a 9″ X 13″ baking dish. Spoon half the coconut cream
on top. Repeat with another layer of ladyfingers and remaining coconut
cream. Chill for 2 to 3 hours.
Calories per serving- 275, Prot-5g. Carbs-33g.
