It’s that time of year again, you know, cold and flu season
and if congestion is one of the symptoms you have to deal with,
then you may want to start drinking this.

What is this?
Coconut milk.
This dairy-free alternative eases the discomfort of a stuffy nose. Give
credit to lauric acid, a fatty acid that’s known to reduce sinus inflammation
and speed up the healing of mucous membranes.

And if you get tired of coconut milk added to a smoothie or a bowl of
oatmeal, you may want to broaden your horizons and make a
rich and creamy dish that’s perfect for the cool fall season.
The dish:
Maple Roasted Butternut Squash Puree.

Right now is the perfect time to pick up butternut squash mainly because
it’s harvesting season and the prices will be coming down, so stock
up and use them to make the above-mentioned dish, pies, fries, reduced
calorie mac & cheese and soups.
Store butternut squash in a cool, dark place and they should last for
a few weeks or even longer. Just make sure to keep an eye on them.

The recipe for Butternut Squash Puree!
Ingredients:
3 lbs. butternut squash, peeled, seeded and cubed (about 6 cups)
3 Tbs. of olive oil
3 Tbs. of pure maple syrup
1/3 cup of reg. or lite coconut milk
1 tsp. of minced fresh chives
To make:
Heat oven to 350*F. On a rimmed baking sheet, toss butternut
squash with 2 Tbs. of oil, 1/2 tsp. of salt and 1/4 tsp. of pepper. Roast,
stirring once, until tender, 35 to 40 mins. Transfer to a large bowl. Let cool
slightly. In batches, in a food processor, pulse squash with syrup, remaining
oil and coconut milk until smooth and creamy. If necessary, reheat in the same
pot over low heat. Transfer to a serving bowl; sprinkle with chives.
Calories per serving- 180 (lite milk) and 210 calories (regular coconut milk)
