The 2 Budget-Friendly Recipes.
Recipe No. 1-
Potato-Topped Meatloaf!
Do you remember your mom’s or grandma’s Shepherd pie?
Make this new and improved version of the popular comfort dish.
Ingredients:
1 1/2 lbs. of russet potatoes, peeled, cut into 2″ chunks
1/2 cup of milk
2 Tbs. of Butter
1/4 tsp. of pepper
1/8 tsp. of salt
1 pound of ground beef
8 oz. of ground pork
2 eggs, beaten
1/2 cup of Italian-style dry breadcrumbs
1 small onion, grated
1 Tbs. of Worcestershire sauce
1/2 cup of shredded sharp white cheddar cheese, 4 oz.
To make:
Heat oven to 350*F. Line a 9″X5″ loaf pan with enough foil to overhang
the sides by 2″; coat with cooking spray. In a large pot, combine potatoes
with enough salted water to cover by 1″ heat to medium; cook until potatoes
are tender, 18-20 minutes. Drain; return to pot. Add 1/4 cup of milk, butter,
1/8 tsp. of salt and pepper, mash. Place on the side.
In a large bowl, gently mix the beef, pork, breadcrumbs, onion, Worcestershire
sauce, remaining 1/4 cup of milk and 1/8 tsp. of black pepper. Press into the
pan. Bake until top is browned, 30 mins. Top with mashed potatoes and cheese.
Bake until meat thermometer inserted into center registers 165* F about 30
minutes.Let stand 10 mins. Using foil, lift meatloaf from pan.
Transfer to a serving plate; carefully peel off foil and slice.
Enough for 6 servings. Calories per serving-440.
Don’t want to make a whole pan, use greased 1 cup ramekins, then top
with potato mixture and cheese, bake for 30 to 35 mins.

Recipe No. 2-
Barbecue Meatballs!
Use this tangy twist on regular meatballs as an entree or appetizer.
Ingredients:
1 pound of ground beef
2/3 cup of fresh breadcrumbs
2 Tbs. + 3/4 cup of barbecue sauce
1 egg
1/4 cup of finely chopped red onion
2 Tbs. of fresh parsley, finely chopped
save a few leaves for garnish
1/2 cup of Monterey Jack or Parmesan, grated
To make:
In a bowl, combine ground beef, breadcrumbs, 2 Tbs. of barbecue
sauce, egg, red onion and 2 Tbs. of parsley; using your hands,
gently mix until just combined.
Divide mixture into 12 portions. Using wet hands, shape into balls.
Coat a 12″ ovenproof nonstick skillet with cooking spray; heat over
medium heat. Add the meatballs; cook, turning, until browned all
over, 5 to 6 mins.
Transfer meatballs to plate; remove pan drippings. Return meatballs
to skillet. In a small bowl, combine remaining 3/4 cup of barbecue
sauce and 1/2 cup of water; pour into skillet. Over high heat, bring
boil; reduce heat to medium-low. Cover; cook until sauce is heated
through and meatballs are no longer pink in the centers, 7 to 8 mins.
Heat broiler. Evenly sprinkle meatballs with cheese. Broil until melted
and lightly browned, 1 to 2 mins. Place a few parsley leaves on the side
for garnishment.
Enough for 4 servings, Calories per serving-385.
