If you’ve given up muffins due to the calories, it’s time to put them back
on your menu.

That’s right, you now have permission to eat muffins again,
thanks to actress and businesswoman Gwyneth Paltrow.

Ms.Paltrow also wanted to continue to eat muffins but was concerned
about the calories, and thanks to her interest in alternative health
and natural foods, she came up with a suitable and tasty alternative.
Her alternative: She uses spelt flour, soy milk, agave and real maple syrup.

The Recipe for Gwyneth’s Low-Calorie Blueberry Muffins!
To make:
Turn the oven on to 375*F.
Line 12 muffin or 6 muffin cups with cupcake liners.
In a bowl, whisk 1/2 cup of oil (safflower or coconut), 1/2 cup of soy milk,
1/2 cup of maple syrup and 1/4 cup of agave.
In a bowl, mix 1 cup each of whole and white spelt flour, 2 tsp. of baking powder,
and 1/2 tsp. of salt.
Stir together dry and wet mixtures; foldin 1 1/2 cups of blueberries, (fresh or
frozen). Divide among liners; bake for 15 to 20 minutes or until golden brown
or when a knife inserted into the center comes out clean.
Calories cut from each muffin: 320
Car grams cut: 35
Cholesterol mg. cut: 70.

Important tip:
Look for spelt flour, agave, and real maple syrup at larger grocery
stores or Whole Foods.
