Whether you enjoy a big breakfast on Sat. or Sun. just try and make it French toast.

Why, French toast?
The following indulgent French toast recipe is packed with immunity-strengthening
fatty acids to fuel your brains and bodies for the Fall and Winter.

The Recipe:
Banana-Coconut French Toast with Warm Caramel Sauce
Ingredients:
3 ripe bananas, divided
1/2 cup of coconut sugar
1 1/2 cups of unsweetened coconut milk, divided
1/8 tsp. of salt
3 eggs
1/4 tsp. of cinnamon
8 slices of whole wheat bread or splurge a little and
go with Challah bread
1/4 cup of walnuts, chopped and toasted
To make:
Mash 1/2 a banana. In a saucepan over medium-high heat,
whisk the banana with coconut sugar and 1/2 cup of coconut milk.
Bring to a boil, reduce heat to medium-low and cook until thickened,
about 8 to 10 mins. Remove from heat; stir in 1/4 cup of coconut milk
and salt. Slice remaining bananas. In a large bowl, whisk eggs, cinnamon
and remaining coconut milk. Dip bread slices into egg mixture to coat.
Heat up a large skillet to medium heat, pour in a little oil or spray
with Pam (non-stick). Cook the bread (Fr. toast) until lightly browned,
about 2 to 3 mins. per side. Place 2 slices of Fr. toast on each serving
plate. Top one slice with 2 Tbs. of coconut caramel sauce and sliced bananas,
and cover with the second slice of Fr. toast. Drizzle with remaining sauce and
sprinkle on some fresh berries (for more antioxidants) and chopped walnuts.

Important tip:
The fatty acids in coconut milk, bananas and walnuts are especially good
for kids, as we move into the colder months of Oct. Nov. Dec. and Jan.
