d) Ask Your Doctor-

Crispy Fish Tacos with Mango Salsa!

Ingredients:
4 frozen fish fillets, (lightly breaded)
or use some leftover salmon
1 red onion, cut into thin slices
1 cup chopped fresh mango
1/2 cup green or red peppers (thinly sliced)
1/4 cup chopped cilantro
2 Tbs. lime juice
1/2 cup sour cream
1 Tbs. mashed chipotle pepper in adobo sauce,
such as Goya
4 taco shells, look for stand-and-stuff type taco shells
4 cups of leafy greens, lettuce, fresh spinach or Swiss
chard and some fresh parsley.
To make:
Preheat oven to 450*F. Place frozen fish fillets on
one side of a rimmed baking sheet; spread the onion
over the other side. bake according to directions on the
box. (make sure to watch the onion, so it doesn’t burn
or cook it in a skillet on top of the stove)
Next, combine mango, pepper, cilantro and lime juice.
In separate bowl, mix sour cream with chipotle peppers.
Place 1 fish fillet in each taco shell. Mix onion into mango salsa;
divide evenly over tacos. Top with chipotle cream and serve with
greens.
Final tips:
If you have leftover salmon or cod, just heat it up in a skillet
and cut into chunks and use it as your protein (fish)
and you may want to pour some oil and vinegar
or salad dressing over the greens to make them
more appetizing.
