With Easter less than a month away there will be plenty of leftover eggs
and if you’re wondering what to do with them, you can use them to make
low-cal treats thanks to a recipe from a top celebrity chef.

The chef:
Martha Stewart.
Ms. Stewart loves deviled eggs but not the calories that come with them
and decided to experiment and come up with a tasty, low-cal version of
the popular dish.
Her solution to the high calorie mayonnaise…Avocados.

That’s right, Ms. Stewart says that the green fruit offers the same
creaminess, but without the high calories.
Another benefit: Avocados also supply you with healthy fats and fiber.

So, if you’re overwhelmed with a large number of Easter eggs this year
and aren’t sure how to get rid of them, just take a page out of Ms. Stewart’s
(cooking) book and make the following recipe.

The recipe:
Martha’s Lower Calorie Deviled Eggs!
To make:
Take 10 boiled eggs, peel them, then cut in half lengthwise and scoop
out the yolks. Puree the yolks, and 1 avocado, 2 tsp. of lemon juice,
seasonings you prefer- black pepper, garlic and onion powder and dried
chives and 1/4 cup of Mayo.
Pipe or spoon the mixture back into the egg white halves.
That’s it, a recipe for deviled eggs with 45% less fat.
And one more tip: If you want to lower the calorie count even more,
use plain yogurt instead of the mayo.

Numbers below are for 2 servings of deviled eggs
Calories cut: 25
Fat grams cut: 4
Potassium mg. added: 150
